I would love to try a classic Bolognese which seems to have a lot of effort behind it. But for everyday cooking, the Pad Thai is more practical due to shorter wait time.

Just put the bolgnese on Sunday morning super low and stir it now and again and by dinner time you'll have a great sauce, or use a slow cooker. It will be worth it

Bolognese is way less work. Pad thai may be faster but it's more work and prep. I even make homemade pasta and it's still less work then when I make pad thai.

Made Sylvia's dish tonite, it was a big hit. I didnt change anything in the ingredients. The flavor was awesome. I often put nutmeg in sauces and soups so it was a nice surprise to see you have it in your recipe. The only thing i DID change is that I adapted it to cooking the sauce in an electric pressure cooker so I could speed up the time it takes for all the components to meld together. I sauted everything in a large pan as you did, but when you went to put a lid on it and simmer it, I transferred it all to the pressure cooker for 25 min plus a 10 min natural release. I removed and transferred back to the pan i originally sauted everything in and let simmer on med-high uncovered for 30 min so the liquids could evaporate a bit, then added the milk, and followed your instructions from that point forward. Basically I skipped the 3-5 hours in between. It worked out well and I will make this again and again. Your family recipe has become mine. :D Pad Thai is next but I have to order some of Marion's ingredients first.

I agree it always tastes better when made by the person with the cultural background. My mum never put celery, carrot or garlic in her ragu yet she was a famed Italian cook and her sauce was legendarily love by all. We could never cook the Thai dishes with such authenticity as Marion so we tend to stick to our own cultural background when cooking but we eat food from other parts of the world when made by the people who really understand how to cook them properly. It's great to celebrate both styles when done with such excellence.

Yessssss. Two of my favorite noodle/pasta dishes from both of your countries but haven’t tried making for myself. The reason for that is because there are so many different recipes for cooking those dishes that I don’t know which would be the best. I will now try these both. I love seeing both of you cooking together. I get two recipes in one not super long video. Thank you! Marion I’ve been wondering why some restaurants pad Thai is lighter than others. The pale color one doesn’t look as appetizing. Lol

I also add an anchovy fillet at the start of the long simmer, and sometimes I add a splash of Worcestershire sauce for that extra flavour! Both recipes looked amazing!

The way your making the sauce is different than in your other Pad Thai vid. You simmered the sugar and added shallots and other ingredients. Can you explain to me what the differences are? I prepared Pad Thai a couple of days ago using the other method. It turned out yummy but this sauce method looks easier. I actually used a little soy sauce to replace the soy paste you used. I couldn't find Dark Soy at the Asian market.Love your videos and recipes!

Ragu is a tomato based sauce made using large cuts of meat such short ribs, beef cheeks that are cooked down and shredded. Using mincemeat is just a standard Bolognese sauce. And yes, I am that person😭😭😭😭

If I was ordering only 1 of em I like the ragu only because I love Italian food, and Italian women. Plus in canada thai food is almost impossible to find in a trusted traditional way. Both look great the ladies

id never use vegetable stock for a ragu id use maybe a light stock like chicken stock or if you want a more robust flavour id use beef stock as well optionally red wine will give a bolder flavour then white wine. nutmeg is a must I love nutmeg its great with ragu

I followed Vincenzo's bolognese for many many years because I always assumed his recipes were authentic. Then his friend from Bologna said he was doing it wrong. This version is also different so I'm stumped on authenticity. I had to stop following Vincenzo about three years ago because he can be really critical and downright racist when it comes to any person cooking non-Italian dishes with pasta. I understand the importance of the traditional and cultural value of specific recipes, but his choice to verbally attack and shame people (specifically poverish individuals who cook to feed their families) in a public manner in front of an audience is simply disgusting 😔 Thank you for sharing this variation. I love the warmth you expressed while sharing this. Peace be with you 🙏
