Hi Marion. I made this today and was absolutely astounded! I could not believe how good this was and how so similar to the authentic Pho my Vietnamese wife used to make. Thanks Marion! I attempted to make a hack Pho a long time ago from a recipe that was obviously misguided, and it was a disaster / inedible. I have encountered some legit recipes using an insta pot, but it’s still a long process imo. I can tell this is the alternative that I’ve been looking for. There’s definitely room for additional tweaks that could get it more to one’s expectations. You’re the best!

Dearest Marion, I love a good pho. My nail technicians are all Asian (Viet Nam, Malaysian, Korean, & Thai) and some of them are related - and they bring in homemade pho from someone’s mom with all of the homegrown fixings!!! So so good. They always graciously invite me to have a bowl with them - so nice!!! Now I can reciprocate!!!!! Yum!!! ♥️♥️🤗🤣🌺🌺

Pssst there’s also pho flavoured stock cubes that are amazingly good, I use them instead of beef cubes when using your beef pho express recipe and I swear it tastes like a 12 hour slow cooked masterpiece!! Just don’t tell any of our purist friends… Oh and a spoonful of sugar, rock sugar ideally but unprocessed sugar works fine, balances out the flavours…

I agree with the seasoning being stock cubes. I've watched many videos of making stock. One channel stated you must use seasoning to enhance the depth of flavor even though many channels won't admit it 😁. Thank you for your service and expertise Marion!

A lot of people discount the value of bouillon in cooking. I made some beef stew recently and snuck in some, and it made all the difference in the flavor. I am going to try this, as I like Pho, but don't like to spend the money to buy it at a restaurant. Thanks for sharing!

Marion, every time you come up with a ‘hack’ it blows my mind at how amazing it is. Please advise how to make this broth without a microwave. I do not use microwave for health reasons.

I stopped using a microwave years ago so I guess simmering the broth for 30 to 60 minutes should do. 30 minutes will I believe create the flavour without boiling it away. Anyway that’s my best guess. Thanks for the recipe.

Sometimes the supermarkets don't have the chicken stock cubes available. If you substitute it with Chicken stock. How much do you add. I'm assuming that with this method you don't have to add cloves or Char the onion and ginger?

The cubes are likely used to make 1 cup of stock per cube, so the equivalent if you're using powder is 1 tsp powder = 1 stock cube. If you're wanting to just use chicken stock/broth, then just replace the water with equivalent amount of stock. In this recipe, she used 2 liters of water (that is about 2 quarts if you're in the US).

Wow, surprised to see this made in a microwave! I'm not big on star anise... and thoughts on substitutes? Or just leave it out? I definitely prefer lime with my pho... I might use lemon if I made it with a white fish.

Star anise is such a main aromatic in pho. Without it, I wouldn't call it pho so just don't make pho. Plenty of other yummy soups out there.

Star anise can be overpowering if submerged for too long. That might have been your experience with them. Too much star anise or they were in the broth for too long. Just use 1 star anise until you get used to it then add more later.

Hm- sounds really amazing (even though I am not a stock cube guy). Maybe another hack: add some gelatin. Gelatin is created when the connective tissue of tough cuts is converted after long cooking.

Gelatin is a good idea...but it is flavorless. It may add to body to your pho, but for more flavor, you'll need the bouillon cubes or stock or more bones and cook it for a while longer. I use more bones and cook it overnight in a crockpot, but I'd also add a little bouillon to flavor it up.

Noodles too thick. Use Mee Sua. Noodles in pack only take min to blanc. Super delicious for noodle soup

@jonny_laguna no, I’m not a food snob. It’s just that I’ve tasted good Pho made the long way and the shortcuts don’t come close. I get sometimes someone (including myself) may want a eat a pack of two minute noodles as a quick meal, but let’s not try and fool ourselves it’s as good as an authentic fresh handmade pasta.

Using beef stock cubes is MSG in disguise, i like my stock naturally and just use beef bones only, may taste bland but more healthy.

HINT: i like to use those little seasoning satchel from the 2 minutes noodle packaging, Beef flavour obviously, i.e add powder, cinnamon stik, stars Anise, onion bulb to boiling water, simmer, season/garnish and serve over noodles.
