actually I think that she could add a little bit more cold water to chill them down, when it boil again, do it again and for the last boil every thing should be quite done.

I am from Xi'an and 'you po mian' ( Chinese name of the one you are making ) is one of our most beloved local noddles. It's really simple but delicious dish and thank you for making it. One thing I want to point out is: the chillie flakes and garlic release their flavours best when they were dry and have hot oil poured on top of them. Then you can add everything you like in there like you did.

I love that you didn't cheat by having everything ready to go before you started the 10-minute timer. And your pappardelle would've been perfect if you'd just listened to Hayley and dropped it in to cook a minute or so earlier. Moral of the story: listen to Hayley!

I mean, she did have two kinds of chili oil already made, which most people don't have available. Most recipes start from scratch with some chili flakes or Gochugaru. This looks like a great recipe nonetheless, but I do think the noodles were swimming in oil 😕

I think the point is the hot oil flash cooks the garlic and pepper flakes in the bowl. If you add all of the other sauce ingredients before adding the oil, the garlic and pepper flakes are warmed but aren't flash cooked. I'm not so good on the art of cooking, but I'm all about the science of cooking. :-)

For the dramatic hot oil pouring, the oils needs to be HOT (use a vegetable oil and wait until it start to smoke a little yes Asian mom trick). Assemble your fragrance on top of the noodles then you can just pour the hot oil on top to impress your guests and voila

Gotta love how the people behind the camera told you to get the noodles into the pot, and instead of getting the noodles into the pot, you spent a minute explaining that the people behind the camera were worried about whether or not your noodles would be ready in time... :P Either way, it looks delicious! Not a dish I've ever had before, but it looks simple enough to make, and I'd love to try it some time.

Hmm, I think things are a bit backward here. The hot oil is used to lightly cook the garlic and chili flake which makes the chili oil. So the order would have been noodles then pile of garlic and chili on top in a pile. Perhaps also some green onion. Then pour hot oil on the garlic to get that sizzle going. Then add vinegar and soy sauce and what ever else you want really. Toss and yum.

Yeah, I think this recipe is a little weird too with respect to the order of the ingredients. I love chili oil and noodles, but this dish has just too much oil in it for my taste....

I love the A-sha hakka style wide noodles. Costco used to have them but I don't see them any more. Trying to find them is soooo hard and you can only order them. This recipe saved me so much! Thanks soooo much!

Reminds me of making aglio olio. It's just that the olive oil shouldn't get to smoking point but you mix the chili and parsley with it before putting the noodles/pasta in the pan.

As very well explained by Alex from the channel FrenchGuyCooking, dried pastas are not an inferior version of fresh pastas, they're a different things, and if you want to get the "Al dente" feel, you need dried pastas. So I believe it may even be the best option here :)

Nice and easy. But it did look like a *lot* of oil?! I counted almost 6 tablespoons of chili oil + at least 2 tablespoons of oil within the chili crisp, and then at least quarter cup of heated oil 😳!

Next time I put lukewarm or any temperature water in the kettle but I put specifically hot water in the pot let that boil for a bit take the hot kettle water and mix the two put the noodles in to boil once they start to froth up take off the lid let it go back down cover it again repeat that until it bubbles up five times and then your noodles will be done.

You are supposed to pour hot oil over dry spices and sesame, so they are partially fried, then add liquid like soy sauce and black vinegar. Finally, mix in the noodles.
