You can also cook eggplants the way Italians do, by frying them until golden like you would in a puttanesca. They’ll be sweet and feel like meat bits. Add them just before serving.

Hello there from Central Mexico!! I am a Chef specializing in Classical Mexican Cuisine but I do cook everything else, love Thai and all Asian dishes! Wanted to write to tell you about my "cheat" for Lasagna in case you don't find Ricotta, which used to happen a long time ago, so I use plain old Cottage Cheese, add 2-3 eggs, salt & pepper any additional spices you like and some melting cheese on top, now I don't beat it so much since it won't matter so just bring it all together and use as a regular Bechamel layer in the dish. This will firm up with the baking and you'll get a nice even creamy layer to your lasagna, of course, Parmesan Cheese and do your layers as regular... hope you try it.

There are ragus all over Italy, the bolognese is just the most famous. So while we might not be able to call it a "proper" bolognese, it's still a totally legit ragu and I would smash it 100% if I ate meat. Might have to make it with lentils or a minced veg mix. 🤤

Ohh how I understand the Asian twist on Italian food! I travelled twice to Hong Kong and fell in love with the culture and food. Since,, I myself put a little twist of Asian in every recipe even Algerian’s I grew up eating. My sister is horrified everytime I do it but I’m not stopping it life is too short!!

And this all just seems so yummy 🤤 never had a recipe of yours fail me (well... maybe spice wise, but I'm Dutch our traditional food has NO spice, Nothing! 🙈🙈 and now since that I'm cooking for myself, ive been experimenting and trying to up my tolerance 👌 youtube is absolutely amazing for getting to know different cuisines around the world and trying to recreate all kinds of dishes ❤ channels like these, that respect traditions, but aren't afraid to adjust and be creative (especially for people still getting to know certain foods, traditional levels might be too much of a 'new experience' 😅 having certain other creative options is great!)

I was on a bus trip around Australia one time, and I put my hand up to help the cook. She made bolognese one night, and put NO MEAT in it! It was completely eggplant instead. I was shocked - but we were the only ones who knew, and you couldn’t tell there was no meat.

I haven't eaten eggplant before. I think it's the look that doesn't appeal to me, but I liked the way it melted down in this video. Maybe this might be a good way of introducing eggplant to my taste buds. 🤔😇😁

I enjoy chopping LOL. You slice the carrot into thin sheets and then julienne and then chop into cubes. Or you can use a mandolin to slice into julienne and then dice :-)

Maybe it’s the style of pan I’m using but I cannot for the life of me get mine to look like yours. What am I doing wrong?!! My sauce doesn’t get thick or stick to my pasta. It’s so frustrating. I don’t bring pork in my home for religious reasons (I’m Jewish and I try not to but I do eat it), so I use beef bacon and beef mince.

Fellow veg here. I like a mix of finely minced mushrooms (king oysters work quite well, or rehydrated shiitake), zucchini, and eggplant. You could use a fake ground beef substitute, but I like to keep it less processed. 😉
