My husband was in the Navy and we lived in Puerto Rico for a few years. There was a small restaurant (?) that we ate at pretty often. Rellenos de papas were my favorite. The potatoes were rough mashed and they were huge. Thank you for showing us how to make them.

This reminded me of my dad’s potato pancakes with garbage omelette that had everything under the sun inside that omelette from leftovers to cold cuts from the wk, he made breakfast every wknd when I was little!! I've had those only once in my life, back in the '70's, when two Puerto Rican secretaries brought them into the office where I worked. I was amazed because I thought they were just potatoes. Papas fritas means french fries or potato chips in Spanish. These are rellenos de papa because relleno literally means stuffed/filled and papa is of course potato.

My Cuban Mother used to make these for us along with croquetas when we were young. I will definitely be making some soon. The only difference I can see from my mom's version was that she would bread them first before frying them and that we called them "Papas Rellenas." I'm in NY @ the North Bronx & remember my friend Miguel going to a shop that sold these from college. Plan on doing today (boiling potatoes as i type). Will used ground pork, add the onions, sweet peppers. May add some grated cheddar cheese to a few (love cheese). Was wondering can I do these in an Air fryer too-thanks for your response.

@@mariscookingpr Hi again, did them in air fryer & worked out nicely. The bread crumps was like a second coating of crispy & i seasoned them with some paprika for color mostly. I would recommend. Some family don't do the oil frying anymore & i get it.
