Hey Bakers! In this video I show you how to make one of the oldest and most popular snacks in Rome, maritozzi!! Super light and delicious, you can't get enough of 😆 Hope you enjoy the video and don’t forget to Like and Subscribe❤️
Maritozzi
¾ cup + 3 tbsp lukewarm milk
1 ½ tsp dry yeast
3 ⅓ all-purpose flour
¼ cup unsalted butter
⅓ cup + 1 tbsp sugar
2 eggs
1 tbsp honey
½ tsp salt
Zest of one lemon and/or lemon
Whipped Cream
3 tbsp sugar
1 cup heavy cream
1 tsp vanilla extract
Process:
1. Heat up the milk either in a microwave or over the stove until just warm. Add in the yeast to the milk, give it a quick stir, then set it off to let the yeast dissolve.
2. In a separate bowl, add in the sugar, lemon and orange zest then mix them together.
3. Next add in the honey and citrus sugar to the yeast-milk mixture. Once everything is combined, add in the eggs and mix.
4. In your electric mixer with the dough attachment, gradually add in the flour and salt until there are no clumps.
5. Add in the softened butter either still using your mixer or by hand.
6. On a lightly floured surface knead the dough using the slap and fold movement until it is smooth. This movement helps give the dough structure.
7. Place the dough into a lightly greased bowl and let it rise for 2 hours or until it doubles in size.
8. Remove the dough from the bowl, knead it with some light flour, roll it into a thick log, then cut the dough into six even pieces.
9. Roll and tuck balls of dough in three parts one way, three parts the other way, and tuck in the four corners. Then make a “c” shape with your hand and rolled the dough into the counter giving it a round shape. Repeat the process and place the rolls onto a sheet pan and let them rise for an additional 45 minutes to 1 hr
10. While that is rising, preheat your oven to 350 degrees Fahrenheit.
11. Brush the rolls with a mixture of one egg and some milk then let them make in the oven for 20 to 30 minutes or until golden brown.
12. To make the whipped cream, in an electric mixer with the whisk attachment, gradually add in all the ingredient and let it whip on medium speed until it forms a stiff peak.
13. To assemble the maritozzi, cut the middle of your brioche but make sure not to cut all the way through. Fill in the buns with a generous amount of the whipped cream. Smooth the filling, cramping off any excess cream
14. Top them off with a dusting of powder sugar and now you are ready to serve!
