Truly, I appreciate everything you have done for the world of gastronomy; You are FirstPlace alongside Mary Berry in my books. It feels odd watching videos of earlier years, I do prefer this Nigella. Castor sugar is a fine crystal sugar. (It is the same as regular sugar, just smaller grain.) It is often used in cooking as it dissolves more readily to avoid grittiness.
