Today we’re in Bacolod, Philippines, famous for chicken inasal, giant bone cansi, and batchoy noodles! We’re going to try a fully loaded bone marrow batchoy with a raw egg and fresh bread. Then after, we’re going to the Merczi piaya factory to see one of the most famous sweets being made!

Not only Filipino's but also thankful for those Chinese people who came here thousand years ago, Filipino culture and food is not originally from them it was influenced by so many races from different other countries such as Spaniards, American and japanese they wanted to owned the Philippines and the people, bc way back then Filipinos were illiterate and ignorant. That's the reason why most land here in the Philippines owned by Spaniards .

Thanks Mark for exploring Bacolod! As someone who hasn't been back home in the Philippines in a while, it is nice seeing my hometown from a fresh perspective and just quite a shock because it is a lesser known place to visit in the country.

Thank you for featuring Batchoy in this video. It’s a comfort food indeed for a lot of people in the Western Visayas area of the Philippines. But Batchoy is originally from Lapaz, Iloilo City.

I find it very impressive for a westerner to appreciate and understand the flavor of the batchoy, because not everyone gets the fermented aroma of the broth. Even some of the filipinos, especially women don't get it. Hats off to you, sir.

It is the little touches that make Filipino food so good. Like adding the egg here with that delicious marrow. I love the way they add pickles, liver and raisins in Menudo and Kaldereta.

I miss the Philippines! Thank you for touring around the the Philippines and showing the world Philippine dishes from the different islands and provinces. I hope you can visit Iloilo someday. Batchoy is originally from Iloilo and my favorite is from Ted's Lapaz Batchoy. I also love pancit molo. It is Iloilo's version of a wonton soup. It is so good and addicting.

That looks amazing! I love soups, all kinds. Here in southeast Louisiana I make a 12 qt pot of beef and vegetable soup early winter, and we eat our fill, then I freeze the rest in qt containers. Also gumbo, chicken rice soup. So satisfying.

If you get the chance to explore Bicolano cuisine I'd be so happy. There's not much representation outside of the Philippines (or even Bicol!), and I do miss that spice.

Hope you can come back to our province Mark and have a collab woth one of Philippines top chef, our very own pride Chef JP Anglo. Aside from all these popular Negrense foods that you've featured, Negros island still have more to offer. Our province is one of the ultimate if not, the ultimate place for gastronomic exploration. We have everything to offer from snacks, ulams, desserts etc. from sea side to the cities and mountains, we have lots of unique and exquisite foods that needs world stage recognition. I love Batchoy. 💝 It is one of the hunger-wiper in the country. Anybody can eat it with an affordable price. The liver and chicharon, as well as the egg is the most tastiest of all. 💝😋😋💝

Hello Mark! Batchoy originated in Iloilo which is a 1-hour travel via fast craft jet from Bacolod port. Come visit Iloilo to taste the original Lapaz batchoy! :) My recommendations would be Popoy's (won the best batchoy competition here), Deco's or Ted's. :) Best batchoys usually can be found within the public markets.

@@lancefortaleza3665 uhmmmm, Iloilo city is known for their batchoy- the original. You must not have visited Iloilo yet but there are tons of food specialities there. Bacolod has a lot of their own specialties so Mark's team should've chosen those rather than featuring batchoy which isn't even the same as iloilo's.

With all due respect, he never claimed Batchoy is from Bacolod. Bacolod is known for making other dishes their own by adding different ingredients. The batchoy in Bacolod has bone marrow, making it very yummy :)

What makes La Paz batchoy quite different tasting from ramen is the added shrimp paste, bone marrow, chicharon, and liver in Batchoy. Batchoy is an umami bomb. But ramen has better noodle texture and an infinite variety of regional variation. Both are wonderful.

Western Visayan cuisine is underrated. I am yet to taste Batchoy. I'm so entranced by the Piaya factory and l love that the people there are proud of their linguistic and culinary heritage. I love Piaya! It's my favorite sweet pastry. I hope you visit my region Bicol soon and try Kinalas and other Bicolano dishes. Bicol is just few hops away from Visayas. Hehe.

Piaya is the best delicacy i love so much. My friend from bacolod dropped by cebu one time when i was at the hospital from an accident i had but her sister went to the room and brought the piaya and after she left and all. Gosh it made me forget im the hospital while im in pain haha. Hopefully i can try their batchoy 😍

I miss eating at Super batchoy house. They managed to surpass the original batchoy places in Lapaz, Iloilo. The classic combo would be puto or pandesal but pandesiosa is an okay subsitiute.

Bacolod is famous for their BBQ and sweet delicates. The original batchoy is in Iloilo City, it's just walking distance from my 🏡. Hehe Iloilo's version of the batchoy only use ginamos ( fermented shrimp paste ) giving out that umami flavor, instead of that bone marrow.

Many thanks for featuring Filipino foods Sir. You should stop by Iloilo, Philippines too. This is the birthplace of batchoy which is originally from Lapaz. There are some places here with more twists to it, more ingredients like intestines, and sides like spicy shrimp paste. You will surely enjoy the food and the sight. More powers Sir Mark.
