CARIBBEAN CHICKEN
1.5 lbs chicken breast skin on
0.25 cup olive oil
1 cup mango juice
2 mangoes
2 jalapeños
1 small red onion
1 green pepper
1 pinch red pepper flakes
salt & pepper to taste
COCONUT RICE
2 cups White rice
2 Tbsp. olive oil
1 cup coconut milk
1 cup Water
salt to taste
