But also, a little thing that I notice here as an Indonesian is how confident and clear Angelina is in explaining the process behind the fried eel - not to mention how comfortable she looks giving a man a ride on her bike. She's one of many Indonesian women that I see in my everyday life, too: young, intelligent, expressive and courageous, the heroes and backbone of Indonesian culinary traditions, and it's awesome to see them finding their voices on social media and in public life in general.

Mark, your wife is Thai & you also live in Siam. One of the characteristics of the Thai Cuisine is its strong sour taste, which is largely absent in Surabaya's cuisine. I'm glad you can still enjoy the dishes, though they can't be your faves, as your head doesn't tilt to the right hahaha

So wait till you see the other food channel by an orang puteh Sonny - raw liver, bile, uncooked blood, porcupine and what not. All local. Yet most of them find the heavenly durian repulsive and obnoxious! I bet Mark will find the dish of water with calamansi refreshing - the dish that local used it to wash their fingers before eating or to rinse their hands off the food odour (if you don't tell him, that is. But Mark is as always as seasoned and streetwise as he can be wherever he goes.)

Mark Wiens is a really nice guy, always friendly, always praising the food he eats in front of the camera. So at first glance, you might not differentiate what he really likes and what not. However, if you pay attention to his facial and emotional expressions when taking the first bite, you can see what he really likes and what not. I think Mark does this on purpose to give us the hint what restaurant is really good though he will always be polite on every restaurant and dish he tastes. That's helps me where to go and that's why I love his videos.

Gotta love a good bit of sambal and kejap. We have loads in the cupboard here in the UK as my wife is Dutch. Far Eastern food in The Netherlands is very much Indonesian influenced in the same way that the UK has strong Cantonese leanings. Babi Kejap is a big favourite in this house.

I'm Indonesian and I don't add tomato ketchup or chili sauce to my bakso bowl, it will be too thick. Just add sambal and slightly add kecap manis (sweet soy sauce). If there is lime or vinegar, I will also add it, depends on the style of warung bakso.

And these Meatball is totally different than italian & swedish meatballs, you’ll know when you tried it.. it might be less healthier since it is added with tapioca flour and the meat ratio is lesser than other meatballs but it’s what make it great, the texture is like biting a juicy grape with crunchy and chewy texture and the flavor is intense, can only be described as godly.

I love your channel I always wanted to travel around the world but unfortunately I do not have the money to travel the only countries I have been to are Spain and ,Italy, France on a Mediterranean cruise I also been to Canada where me and my family went to this south african restaurant called Plan B in Mississauga which was so good I had this dish which was a sausage over fries and lettuce topped with a peanut sauce, ketchup and mustard which was so good but I got to try all kinds of food when I was in Spain especially tapas we went to this tapas restaurant and I tried this sweet octopus Tintagel with saffron. I go out with my friend once a week and we try different restaurants near where I live and we also try new restaurants that we have never heard of before.😁
