Thank you nice lady. Orange vinegar coming up! My plan is to make a "peels" batch with white vinegar for cleaning, and a "flesh" batch with water/sugar for drinking. I also intend to see how each of these might works as an astringent for my face (Witch Hazel has gotten very expensive). I'll try the several ACVs I made, too, to see which one of all these works best. Thank you for your service to the Lord. Don't let it go to your head, but do let it cause your spirit to rejoice. Mary, I'm a week into making orange peel vinegar from the oranges I juiced, and I have to tell you what a joy it is to stir 2x daily...it's AROMATHERAPHY!!! It smells so good.

Those jars are lovely to look at as your vinegars process. What a way to brighten up the kitchen! Today I cleaned out my pantry and wore myself out! So I’m relaxing with your vids before bedtime. lol

I had no idea we can have vinegar from oranges. I only heard about apple vinegar. I typed orange vinegar in the search section just by curiosity and I found your channel. Thank you so much Mary for sharing your knowledge. I learned a new thing today.

to prevent mold growth: in a tightly packed jar- fill a small bag with beans or rice or lentil, etc... and press it down on top to fill jar to top - the key is to reduce exposure to oxygen. In a loosely filled, liquid heavy jar- cut discs of parchment or waxed paper and place on top

yeast starts the process consuming the sugar and producing alcohol and carbon dioxide gas (bubbles), acetobacter(in the presence of oxygen) then consumes the alcohol and produces acetic acid (vinegar) that's why it smells like yeast in the beginning and vinegary after a few weeks . Putting a one way valve on top of the jar lets the carbon dioxide gas escape and prevents oxygen from entering the jar keeping the contents in an alcoholic state and prevents the contents from turning to vinegar. Just depends on what you are trying to make!

Nice video, Mary. I just finished making apple vinegar from scratch. I allowed the apples to ferment until they turned into vinegar. I removed the apple peals and cores, strained it through a fine strainer, added a Tbsp of sugar to the vinegar and now I'm letting it sit for another 3 to 4 weeks before slapping a cap on it. Next time I will try your scented vinegar. :-)

Jumpoff A - Sounds wonderful. I like the idea of making apple Cider Vinegar your way and adding the sugar after you strain it. Do you figure the apples have enough sugar in them to feed the bacteria? Sounds like it. I’ll bet it becomes a fantastic vinegar! I’m going to try your way next time!! Love, Mary❤️😘❤️

So happy you like this!! Yes, it's amazing how you can make vinegar from pretty much anything. I have made so many variations. One of my favorites - which I also have a video on - is vinegar made with strawberry top scraps. It's glorious!! 😀

Wow?? Really? Any kind of veggies? Which ones have you tried with really good success?? I've made a ginger bug and left it in the bottle unattended for months... then when I got around to try it, it became a very acidic vinegar which I really like. I've made apple cider vinegar with added vinegar mother, but towards the end, even after waiting for months, it did not turn very sour at all. Recently, I've made a pineapple fermented drink which turned into alcohol which is great, but now I want to try to see if it could turn into vinegar, so I added the vinegar mother in with a bit of ginger vinegar I made earlier.

Hi Mary! Wendy Callihan here and Heidi sent me over a few weeks ago. I love your videos and noticed that you are using coffee filters. Well I just started making all of these things and canning and sprouting and it’s mostly Heidi’s fault. Between her and Stacy over at Off Grid. Lol. It started out with kombucha which I mastered right away. After the first ferment I grate fresh ginger in and wait a day or two to bottle. It’s actually better than the store bought. The only thing I could think of to cover my jars was a coffee filter and I just screwed the lid gently on top. Bravo 👏

She is such a doll! I am so glad to get to know you now too!! And I love that you are going down the Traditional Foods trail!! One thing leads to another!! LOL! My early videos - I think about the first 16 or so - start with roasting a chicken and then making chicken bone broth - then beef bone broth - then ferments - and cultured dairy - the sourdough starter - then soaking and sprouting grains - and making homemade sprouted flour and on and on and on! LOL!! I am a complete Nourishing Traditions fanatic! LOL!! So glad you're here!! Love, Mary

Actually it was in an effort not to have to throw it away.. pineapple from my kefir second fermentation... and ginger from my Kombucha second ferment.. I just will freeze it and reuse it.. But I am sure fresh is super great as well..

Green Rage - I understand completely. I have pulled lots of stuff out of my freezer over the years to make things like that to avoid throwing them out. I just can’t waste. Mary, I tried this with fruit scraps. I am 20 days in. I have the yeast smell still, and it is around a pH of 5. It no longer has the bubbles. Do I need to add more sugar? Do I leave it alone? Thanks!!!

Well I have apple cidar and citrus vinegar brewing. I added the additional 1/4cup sugar to the apple cidar. I think I also need to add it to the orange also. It won't hurt it will it? I'm still staring it twice a day to prevent mold.

Hi Mary I made vinegar from peaches like you showed the video with the strawberries but I think I added to much sugar . The liquid looks like gel. I did the scented with orange peels to clean and I love it but not on mirrors. I forgot about the oil that the orang peels have

Hi Teresa, Try straining the peach vinegar and see if it thins out a bit. Sometimes it can look different once strained. But yes, peaches have a lot of natural sugar so that might have interfered with the process. Love, Mary

Mary, go over to Pratt Family Homestead because he ferments and I just watched his asparagus video today and he has a Ball brand weighted disk you place on top and it keeps your food submerged. Hope this helps. 🦋💜

Tammy Hanson - Hi Tammy, Thank you so much for the info!! I have glass weights like that but I just use them for fermenting. When it comes to making vinegar, you need the naturally occurring bacteria in the air to be able to get into the solution. It’s similar to when you make sourdough. So I’m not sure if the weights will work because they will keep out the “acetobacter” which is bacteria similar to yeast. It forms on the top that is exposed to the air because it needs oxygen to form.If it’s submerged and the air can’t get in...Might it make more of a fermented product? Rather than a vinegar? I’m not sure. But it may be worth experimenting with! You are the best and always thinking of me!! I am so glad you’re here!! And I love the Pratt Family Homestead too!! Love, Mary❤️😘❤️
