Delicious! Made it today and had to have seconds. I didn't have a green pepper, which I will add next time, and only used one tomato which would have gone to waste. But I didn't want it to be so heavy on tomato flavor anyway and it turned out to be great! I used some Italian seasoning, didn't peel the potatoes (which is my habit for anything like this or stew) and put extra cheese on top. YUM! Thanks so much for something different without pasta, rice or tomato paste.

That looks great! I will make that this weekend. The cheese topping seems to really set it apart from everyday to gourmet! YUM! I recently learned that almost all of the potassium in a potato is just barely under the skin….so I scrub them well and leave the skin on. It’s nearly impossible to not remove that priceless potassium.
@MarysNest3 жыл бұрын
Hi Robin, Sounds like a great plan. If you leave the skin on the potatoes try and use a thin skinned potato. I have tried it with russets and there skin is just a bit too tough - even when cooked. I find it works much better with the skins on if you use a red skinned or Yukon Gold potatoes. Enjoy! Love, Mary

Good Day Mary, Thank you for this video. I use to do a variation of this a long time ago. Thanks for the reminder. I would make this as a base, portion out and freeze, then work off that, so much you can do with this, even add eggs on top or scramble into. Also, you may not be aware of this product, it is new for me as well. Konjac Root powder, (Glucomannan). I heard of it from someone who is keto, it seems that community uses it as a thickener and it is a fiber as well. I got some and it works well. Do an experiment first by putting the suggested amount in suggested water amount and let it sit, this will show you how it behaves (thickens). Just an FYI as another alternative. Have a great weekend.

The easiest way for me is to brown my meat and drain add with onions chilli powder garlic to taste I like to add steak seasoning Tbsp of each of the seasonings I use. Make homemade or box Mac and cheese extra creamy add in hamburger mix stir well. You can add diced tomatoes of you choice, whole corn, beans. Always extra 🧀. Lol Sour cream, salsa, I have even used the helper to top a salad. Fab for leftovers... Mmm... Now I am getting hungry. This suck. Lol
