Hello Mary, can you recommend a good crock pot [slow cooker] please? I have heard that it is best to get one with a stainless steel bowl, not coloured ceramic, do you agree? Thanks, and best wishes from across the pond :)

@@CumbriaPreacher - Hi Dale, Thanks so much for visiting. I do not have a slow cooker/crock pot with a stainless interior. People talk about them because they worry that the ceramic ones may contain lead. However, that said - I really like mine which was made by the Hamilton Beach company. It is 7-quarts...nice and large - sorry I am not sure what that translates into metric. I contacted the Hamilton Beach company and they said that their slow cookers did not contain lead. But you do not need to take their word for it because there are lead testing strips! My ceramic interior did if fact not contain lead! Good news. So I would recommend mine. Try searching on your UK amazon site to see what you can find. That might be your best bet as I do not specifically know what type of stores you have that are similar to Target and Wal-Mart where slow cookers are sold here in the US. BTW - when I was in London the last time I had the best scones ever at the cafeteria at the Imperial War Museum. Delicious!! Thanks so much for visiting my channel. I am so happy to have you here!! Sometimes, when I'm lazy - what happens quite often lol - I don't ever add the eggs, the baking powder or the baking soda (the sugar I never do), so I just put the discarted sourdought right on the buttered pan (with salt) and thats it. I like to eat it with honey... Sooooo good! :)

Mary, about 3 weeks ago I started my own sourdough starter and today its active. I had quite a bit of discard and this morning I made for my wife and myself your sourdough pancakes. I followed you directions and wow these are the best pancakes I ever had. My wife also was very impressed as well. Thanks Mary for your easy to follow instructions and your contribution to all those cooks and bakers out there.

I just made these with my very first starter (made from KA Whole Wheat flour-11 days old) and they are truly FANTASTIC!! So much flavor! I increased the recipe by 1.5 (3 cups starter, etc.) to feed 5 adults and it yielded 14 decent sized pancakes. To the person, they said they were top one or two they’ve ever eaten. Thank you for sharing!

This recipe is so good! And I love that is uses all sourdough discard with no additional flour, just how a discard recipe should be in my opinion. The baking soda really helps with the sour flavor, I was amazed! Thank you Mary!

Mary, just got a 300 year old starter from Napoli Italy, and I am in DISGARD HEAVEN ! I just discovered your site, thank you for all the great info, and the recipe on sour dough pancakes, brings back memories when I was a kid on the Ranch in Nevada. I was lucky, during the Vietnam War I was stationed at Fort Wainwright, outside Fairbanks Alaska. The post bus stopped outside a diner....that made sourdough pancakes. Very thin pancakes. Almost everyone saved a couple of dollars to go there every Saturday for those pancakes.

Beginner here. I finally got some starter that doubled in size this morning after 3 days. It’s not at the sour smell stage, so I must discard a cup’s worth and keep going. Your recipe halved was perfect for two yummy fluffy pancakes. Thanks!

Hi Mary! I am just learning how to make sour dough breads... its a work in progress. Right now we could use them to stop doors open or in self--defense. Today I am going to make your pancakes.. in just about 5 minutes, actually. I felt compelled to leave you a note because when you had problems saying something I laughed out loud -- not at you, but with you because I just launched my Youttube channel and in my introduction video I trip over my tongue several times... why do we do that on camera when every day we dont? Anyway, our channel has to do with homesteading in a residential neighborhood... I'd love it if you'd join us and give us pointers! You are welcome to put links to your videos, too. I'll be doing some cooking videos (first will be making vanilla extract)... anyway, I subscribed and really love your presentation!!!!

Mary! These were fantastic! I mixed in a little flour/water as I didn’t have enough discard, but otherwise followed the recipe to a T, and it was so easy and super delicious. I’ll just keep my next discard in the fridge until the mood for pancakes strikes - happy to not be chucking that away anymore.

I have been nurturing my starter (I named it "Lazarus") for almost a year now and have been making delicious bread, pancakes & even english muffins in my Stratford, CT kitchen! Thank you for this simple recipe. New to the whole sour dough thing and baking in general. These pancakes were a big hit with my family. Kids gave big thumbs up. 👍🏻

I just made these and they're awesome! I like adding banana and cinnamon plus I added bacon crumbles. (The real stuff). I even froze some for later. Thanks so much for your videos as I have just started baking and sourdough (two loaves) and appreciate your approach and methods, I am a seat of the pants cook myself when measurements aren't critical.

I don’t really care for pancakes but make them once in a while for my family - today I had exactly 2 cups of sourdough starter so I thought I’ll make chocolate chip pancakes- THIS RECIPE IS SO GOOD!! I am receiving raging reviews from my family as I am writing this!

I made the King Arthur recipe for overnight pancakes\waffles this morning. It was so fun watching the batter foam and bubble after adding the baking soda! Like a mini science experiment.

I finally got around to making pancakes out of my sourdough discard and I am really impressed with how delicious they came out! Of course the second one came out better than the first one...lol. I used buttermilk instead of honey.

Hi Mary. I found you this past week and have watched several of your videos. I love your channel and your style of sharing. I also love thrifting and learning new things. I have a sister-in-law that lives in New Braunfels so we've been in your hill country many times. It would be fun to meet you some time when we are in your area again. We are in a surburb of Tulsa, OK. living on a farm. I am a city girl who married a country boy and now we've moved back to the farm where he was raised. We were high school sweethearts and got married after graduation when we were both 17 years old. We've now been married almost 48 years. I am so happy you've share about your family. This is my story today, I have a perfectly ripe avocado and no bread to put it on so I decided to look up a pancake recipe using the sourdough starter discard, this one sounds amazing minus the sweetener, so I will enjoy it with avocado on top and some kalamata olives, savory is always good

Sourdough pancakes are the best :) Your honey looked like delicious buckwheat honey.. I like dark honeys. One thing I never see brought out for using your "discard sourdough" (I never think of it as discard-more like making room. ) Is to use it as a gravy thickener, for pan drippings.. The flavor is really delicious and you don't need to make a flour slurry.. Thanks Mary.. your family eats well at your house.. ;)

I want to try this recipe but Im not sure it makes a difference if your sourdough discharge comes straight from the fridge (to accumulate enough) to make these, or if it needs to warm up to room temp before?

Mary's Nest wow Mary that is amazing I will find you on FB. I am a European Burgher so my heritage is very mixed, I have French, Dutch, German, English, Portuguese and Ceylonese heritage and I live in Melbourne Australia. I’m am married to an Australian and cook a lot of different cuisines. I started Pressure Canning about four years ago and am the proud owner of a Presto 23. I PC a lot of different foods and my husband and daughters a hunters, I grow as much as I can and I also sprout. I will be slowly going through all these links and I have been sharing your youtube posts with friends and family as I was so impressed with your pancakes. I have finally got my sourdough starter to a good stage and it is doubling within four hours so I have now placed it into the fridge as I don’t bake every day, I started it about middle of March when our shelves where cleared of yeast and we are still unable to buy any. Thank you so much for all this information.

Hi, Mary--thanks so much for this video. My mouth is watering just looking at your pancakes! I'll give this a try today, I promise. Question. Your starter seems a little bit thick. What hydration is it? I feed mine at 100%, but it looks just a bit thinner--already pancake batter consistency, so I wonder what the added liquids are going to do to it. Keep up the good work1

Hi Justin, My starter is also 100% hydration…the conditions in everyone’s kitchen is different and weather plays a role too. So what I would recommend is first experiment with your starter, as is, and try to make one pancake. If you feel it’s too loose, and a bit of flour. Keep me posted on how they turn out. Sarah Elmira Royster Shelton - Hi Sarah, This starter is fed with all-purpose flour which I transitioned from my original rye starter. I did this to keep as accessible as possible for folks who may just want to use all-purpose flour. But I have other starters which I also have going. One is with rye and the other is with einkorn. Sometimes I have others going to. You can start your starter with any flour you want. I find that rye is the easiest to start a starter with. But you can use any flour. And you can transition any sourdough starter you want. It’s very easy. You just start feeding it with the flour that you want. Give these pancakes a try. They are so light and fluffy!! I have several starters (einkorn, dark rye, wheat, coconut flour, whole wheat, brown rice, buckwheat, kamut, pumpernickle, a mix of rye-kamut, mix of barley-rye). My oldest, rye, is over 20 years old which I started before culinary school thanks to nana Shelton. Currently experimenting on feeding a rye sourdough with a blend of rye and chocolate powder. Your demo with wheat is the easiest and always deliver a good fluff so all watchers will be thankful for that :)

Hi, I just made this. The batter was super bubbly and foamy, but quite liquidy, and in the end of the pancakes came out fairly dense and flat. Not sure what needs adjusting... (I followed the recipe to a T by the way.) And actually, when I put the batter onto the griddle, there were tons of bubbles immediately, like that were just part of the batter, so how to tell when to flip them?
