Cool! My son and I just built a solar dehydrator which is working really well (mile high very dry and hot here, Colorado Plateau) and last week did strawberries. Now I know what to do with em. Thanks!

Thank you for responding! The dry cabinet we built we did very inexpensively with furring strips from Home depot for about $1.30 ea., some new screen from walmart about $15.00 and some old fashioned shellac which when dry is non toxic and hypoallergenic. Yayy very cool. If you wanted the meringue cookies to be chewy on the inside would you just cook them less?

littleointment Actually, bake between 300F and 350F, for 10-15 minutes. The color will be a little on the tan color side because strawberries won't keep their color with the heat. But careful not to let them brown. Then take them out and let them cool to room temperature before removing from the parchment. If they stick, let them sit to dry out a little longer. This makes meringues that are crispy on the outside, a bit hollow and chewy on the inside. :-) Good luck & happy experimenting!

I'm considering trying something like this for Christmas. BUT I was thinking about replacing the strawberry dust with either crushed/blended peppermint candy OR cocoa powder. What do you think?

+Whatsursign YES on the peppermint candy. Careful on the cocoa as I've heard others use it and have their meringues fall flat. I recommend joining the facebook group to see what others have done. Have fun making your Christmas sweets :-)

ive never made meringue cookies , but they look like they melt right in your mouth or dissolve very easily? if so, I wonder if I could make this for my toddler as a snack. you know those baby snack that melt easily in their mouths?

It's mostly sugar so, yes, it melts in the mouth quite easily. Not something my parents would have let me have as a toddler though! haha ;-)

Hello looks yummie, my whipping goes very well with thick peaks, but in the oven everything sinks evenly. I do not open the oven in the meantime...whats going wrong ;-(

Ok. Dumb question, but if I don't add vanilla extract, will it still taste a bit like vanilla? If not, what would it taste like?

+L D It won't taste like vanilla but it will taste very sugary. Vanilla mellows out the sugar. And it will taste strawberry-ish if you add the dried strawberry powder :-)

+anitramic Tell me what you did and I might tell you if I spot any trouble spots. Did you use canned or homemade aquafaba. What was the consistency of the aquafaba? Did you achieve stiff peaks before folding in the strawberry dust? Etc etc. Some of the common problems are aquafaba that isn't thick enough and people not using sugar.

I used homemade aquafaba. And I put the aquafaba in my standing mixer for twenty minutes and checked on it every five minutes. I may have put to much aquafaba in the mixer but it didn't look like to much when I first started.

anitramic As for your seafood allergy question, I really don't know. For your aquafaba, were you able to produce stiff peaks? I really encourage you to visit the facebook group if you can (link in the description). If you look in the "Files" section, there is a basic troubleshooting guide that might help.
