That looks wonderful and so much more interesting than just stuffing butter under the skin. If we we had not had an invite out to join family for dinner on Christmas day I'd give this a try! I'd imagine it will go well on a large Chicken also, so will try it on a Sunday roast in the New Year.

Definitely will work on a chicken also. Probably adjust the spice and cooking time. Could add more butter as I am a bit stingy with oily stuff 🙂

Awesome Bird! I once tandooried? a whole turkey for 11 Hungarians for Christmas dinner. They looked at it a bit concerned but when dinner was finished so was the turkey. All of it!

Finally someone who knows howto cook a Turkey... My old head chef always said take a turkey out at 70°c because by the time it rests the internal temperature will go up, it would amaze you the amount of chefs who cook the turkey too 75°c and then wonder why the meat is dry

We're going Japanese this xmas, but have a turkey on hand, so will try this great recipe soon after. As a professional chef/lecturer, I have cooked hundreds of turkeys in hotels and restaurants, so would recommend roasting the turkey first on one side, then the other side, and finally on it's back, this will allow the juices to run back and forth keeping the bird moist at all times. I sometimes use foil when roasting and then remove it to brown and crisp the skin.

amazing video. will try it. what if i don't have a turkey rack ? I only have a enamel coated iron skillet 12''. ALso any substitute for butter? coconut oil or avocado oil or EVOlive oil?

Thanks. You can put some onions, carrots as the base or also use roll up some foil as a base. Any oil of your choice is fine as a substitute. 👍❤️❤️👍

Around 1:30 or so you said that you were adding baking soda to the salt but you showed a box that said "baking powder", which is close but not the same, at least in the U.S....but I can confirm that baking *soda* will help skin get insanely crisp.
