Masalaydar Roast:
Ingredients
Chicken whole 1 kg
Yogurt 1 cup
Ginger garlic 2 tbsp
Tomato puree 2 tbsp
Allspice 1 tsp
Brown onion grinded 2 tbsp
Coconut grinded 1 tsp
Cashew nuts grinded 1 tbsp
Salt 1 ½ tsp
Chili powder 1 ½ tsp
Chat masala 1 tsp
Roasted & crushed cumin 1 tsp
Siracha sauce 2 tbsp
Egg boiled for garnishing
Coriander leaves for garnishing
baby potatoes fried to serve
Method
Marinate chicken with all the given ingredients for 2 hours. Heat ¼ cup oil, add marinated chicken, fry well for 5 mins on each side, add leftover marination with 1 cup water, cover and cook on medium flame until done, remove, serve garnished with boiled eggs and fried small baby potatoes.
Daal Maash Dhaba Style:
Ingredients
Chicken breast 1 boiled and chopped
Maash ki daal 1 cup
Oil ¾ cup
Green chilies chopped 4
Tomato paste 1 cup
Salt 1 tsp
Chili powder 1 ½ tsp
Cumin crushed 1 tsp
Turmeric ¼ tsp
Coriander powder 1 ½ tsp
Capsicum ½ julienne
Yogurt 2 tbsp
Allspice ½ tsp
Black pepper ½ tsp crushed
Dried fenugreek 1 tsp
Parathas to serve
Method
Heat oil, add chopped green chilies with blanched and chopperized tomatoes, fry well, add in dry spices except allspice, yogurt and kasuri methi and fry well, add the boiled daal, fry well, now add in boiled and chopped chicken, capsicum, fry well, lastly add allspice, kasuri methi and yogurt, bhuno well, add coriander leaves chopped and remove, serve with nan.
Pull apart cheesy bread:
Ingredients
Flour 4 cup
Butter 2 ounces
Salt 1 tsp
Lukewarm milk 1 cup
Sugar 3 tbsp
Instant yeast 1 ½ tbsp
Eggs 2
Oregano 1 tsp
Dried parsley 1 tsp
Cheddar cheese 1 cup grated
Ingredients for garlic butter
Butter melted 3 tbsp
Garlic crushed 1 tbsp
Crushed red pepper 1 tsp
Method
Put flour in a bowl, make a well in center, add in butter, salt, yeast, lukewarm milk, sugar and eggs, mix all gently, mix well till it forms into a dough, remove on the kitchen counter and knead well. Grease your bowl, put the prepared dough on it, leave it covered for 1 hour in a warm place, punch down the dough, knead well again, make into small 16 - 18 equal balls, grease your pizza plate and start putting in the balls starting from the center of the tray, again leave it covered to rise till it comes to the edges, brush gently with garlic butter, top with grated cheese on the balls, top with oregano and parsley, cook to bake for 20 mins on 180 d, remove and again brush with garlic butter.
