Also, your cookbook, The SalviSoul Cookbook made me cry both to finally see these recipes in a book (A BOOK) at the bookstore and to read all those heartfilled stories. Looks delicious. Can I use white vinegar instead of apple cider vinegar?

Yes, absolutely! While apple cider vinegar is commonly used in Salvadoran curtido for its slightly fruity flavor, you can definitely substitute white vinegar if that's what you have on hand. It will still add the necessary acidity to the curtido and should work well in the recipe. Enjoy your curtido!
