Vito - Thank you for this video. I am watching some older videos again to help get your numbers up and I realized that I learned something new again re-watching. I have the same Gozney Dome oven in the same colour and watching pizza cook in this same oven but with your techniques is educational. I think my next pizza night this week will be improved!

I have been making home made pizza for several year and I do make a good pizza. But have been following Vito for a short while searching for a better pizza and since he has showed me how to make pizza with poolish and double fermentation I found the best pizza I have ever made and tasted I AM SO HAPPY I met Vito on KZbin. In the USA "fish" on pizza usually means anchovies.

Thanks Vito- great videos as always. One question - I am using a Gozney dome just like yours and my pizza bottoms never come out browned and crispy. I heat the oven up till it gets over 800 degrees, and the top and edge is perfect but the bottom is blond. Very disappointing. I will keep watching and maybe you will talk about it.

@@Leoduranbox thanks but we already tried heating it till it was over 800 degrees. We don't think the base is the same temp as the air inside the oven. An infrared gun showed the temp and it was the same as the Gozney thermostat.

If it’s not browning, consider moving the pizza with each turn to new hot stone(like Vito said, normally place in exact same spot to avoid burning , but you’re having opposite problem)

That’s where I have been getting messsed up with. I’ve watched soooo many of Vito’s dough or pizza making videos and there is so many different ways,kinds,sizes, ect that I got confused until just now when Vito said for Bari style he only uses about half the amount of dough for Bari style then what he used for the same size as Napoleon style.

Please can you do a video on 'window pane test'? I notice in all your videos you do not discuss this? Is that because you do not do it? Every time I make dough, I follow all processes, however my dough tears easily. However, when I press my dough ball, it does spring back so I assume it's ready and ok.

I love tuna fish but the most I would use it far is with lemon flavor or sour cream. But I put it on sandwich bread. And for some reason I always want or crave black pepper on it. But taco favored hamburger meat is good. Texan here. Pinto beans won't, that's a favorite with corn bread on its on.
