Ive replied all over the other comments but just so everyone else sees, use a cast iron skillet on top of the pan it comes with and you won't have this problem. Just did a 10 hour cook like that with no issues. You can get one for $15 on Amazon fyi

My main problem is Simi!lar to everyone else in keeping the chips smoking. Like Beard when opening the chip tray door the pan flares up. I bought the cheap Wal-Mart cast iron 10" skillet but uses too may chips to smoke a couple fish. When using smaller cast skillet the chip won't stay lit enough to smoke. Smoking meats is truly a fine art.

the foil was causing the flame so you were smoking with burning foil. using coal & hunks of wood without gas on once you get it all going. I had electric and used wood in it because I like the low temp. Then light bulb went off in my head. Best of all worlds using propane to start it & wood or coal or both slower and lower to maintain if It wont maintain by my other modifications I mentioned. . also i have amazon cast iron chip box with lid with slits in it... if you cover your chips tin foil with holes they burn slower. hunks are the way to go. chips are for quick smoke unless you modify with hole and cover & coal to maintain heat not so much the flavor. Also soaking is steaming wood a whole different smoke then dry wood . This is my 2 cents compiled from many searches & then personal experience.

I posted this earlier but it didn't post. The pan that came with it for me works great. The secret is to put Charcoal and chips, chunks may work I haven't try ed it. When the chips catch fire or not SHUT OFF the propane, use the bottom door to control the heat, you will get alot of smoke. You have to regulate it for a time but it will settle. There is so much smoke this way that when the temp drops you can engage the propane for the rest of the cook.

Cover the top with foil and poke some holes in it. That will keep it from flaming up.

I bought one of these smokers over Thanksgiving at academy I’m have the same trouble with the heat spikes I have even soaked the chips that only prolongs the chuncks igniting I even use the lowest heat setting I just did a long smoke and it was exhausting trying to keep the flames down and temp down plus it took away from family time I literally had to sit on the back porch and stare.. so maybe I’ll try the aluminum foil trick or maybe cast iron I love the build of the smoker just can’t find how to fix this flaw

Get a cast iron skillet. Just got the same smoker for Christmas. used a cast iron skillet on top of the cheap pan it comes with and not once had flare ups. I also used a combo of soaked and dry chunks. It seemed to keep the temp at 235ish which I wanted.

I just realized I’m replying to a 3yo comment but word for word I couldn’t have written it any different because I have the exact same problem. All the way down to the part about just staring at it. Still haven’t nailed it down yet. Did you?

man find yourself a cast iron skillet for the chips. No flareup in my Masterbuilt Sportsman. Also mine has a bracket on the door for holding the chip tray. Might want to mount a chip holder on the door and use the skillet on it. Think mine is 7" or so. You'll thank me later.

I'm not. The flame from the burner is making the wood catch fire.

I got one of these smokers for Christmas.....my first smoker. I was wondering if soaking the chips first would cut down on the heat. Do you have any advice on soaking the chips vs. no soaking first? Thanks for your videos!

Yes. Soaking the chips would help. I didnt soak mine for this video because I wanted for the chunks to catch fire so it could season the smoker better. The issue is the chip pan. The holes it had are way too big allowing for too much direct heat to hit the chunks.

But if it is your first smoker, I would highly recommend an electric one. It takes the guess work out of temperature control.

@@TheSmokingBeard The wife got me this one. I asked for an electric, but she didn't notice the difference so got the propane. I thought about returning but I want to be able to take it camping and stuff so I guess I will see how it goes. Based on the videos I watched of yours, to season it, don't worry about soaking the chips. However, with cooking, maybe soak the chips, and even use aluminum foil or a iron skillet to control the heat better??

I ran the lead through the damper and positioned the temp prove in the middle of my smoker
