Love Chef John's recipes. Here's an ingredient list & Directions: Spicy Chinese Sausage Stir Fry Ingredients/Shopping List Ingredients/Protein Amount (Prep) (Notes) Chinese Sichuan Sausage 2 links (sliced on bias/bite-sized pieces) Ingredients for Stir Fry Amount (Prep) (Notes) Vegetable Oil 1 Tablespoon Shaosing/Shaoxing Wine 2 Tablespoons (or dry sherry) Carrot 1 large carrot (peeled/sliced into very thin disks) Celery 1 stalk (sliced on bias into thin slices) Fresh Small Red Chili Pepper 1-2 peppers (stem off/thinly sliced) Sea Salt 1 teaspoon Palm Sugar 1 teaspoon Water 1 Tablespoon Sesame Oil 1 teaspoon Directions Abbreviations - C - Cup, TB - Tablespoon, tsp - teaspoon, oz - ounce Asian Cooking Notes Before stir frying anything, be sure your protein is cut and marinated, your stir fry sauce is made and all your vegetables are prepped. Lots of small bowls with prepared ingredients nearby makes stir frying so much simpler. Prep Work (Before Starting to Cook) Hint - Cooking goes much smoother if you measure out and cut ingredients before starting to cook. Spicy Chinese (Sichuan) Sausage - slice on bias into ⅛-inch pieces. Set aside on large plate. Celery - remove leafy top and tough white base. Slice thinly on bias. Set aside on plate. Carrot - remove stem and peel. Slice into thin disks (almost opaque). Set aside on plate. Small Red Chili Peppers - remove stem and slice thinly. Set aside on plate. Making Spicy Chinese Sausage Stir Fry Stir Frying See Prep Work (Before Starting to Cook) above for how to prepare ingredients. 1. Place wok over Medium- High heat. When wok starts to smoke, add vegetable oil (1 TB). 2. Add sliced Chinese sausage and stir fry until almost cooked through (2-3 minutes). 3. Add Shaosing wine (2 TB) and stir fry for 1 minute. 4. Add sliced carrots, sliced celery and sliced red peppers. Stir fry and toss for 2-3 minutes or until vegetables soften slightly. 5. Add sea salt (1 tsp), palm sugar (1 tsp), water (1 TB) and sesame oil (1 tsp). Toss and stir fry for 2 minutes. Remove wok from heat. Serving Spicy Chinese Sausage Stir Fry Move Spicy Chinese Sausage stir fry to serving plate, Serve immediately. Can anyone tell me what is purpose of white wine in cooking? Is it for the flavoring or for the aroma? An what does it taste like?
@TasteShow5 жыл бұрын
It will enhance the flavor of the dish. The alcohol in the wine evaporates while the food is cooking, and only the flavor remains.
