Matcha flavoured thumbprint cookies with a white chocolate ganache filling. White chocolate ganache is made from just 2 ingredients and matches well with the matcha flavour. Make these cookies as regular thumbprint cookies or add a couple extra steps to turn them into Warawara.
This recipe makes 12 cookies.
Steps:
1. In a large bowl, combine butter, brown sugar and granulated sugar. Beat until it becomes smooth and creamy.
2. Add the egg yolk and vanilla extra. Mix until it's combined.
3. Add the dry ingredients (flour, matcha powder, corn starch, and salt). Mix until a dough forms and there are no more signs of flour.
4. Divide the dough into 12 1tbsp large balls.
5. Flatten each ball into a round disk using the base of a glass or the palm of your hand.
6. Press your thumb into the cookie to form an indent. This will be warawara's body. Then using a chopstick or something similar, make smaller indents for the arm and legs. Repeat this process for the rest of the cookies. Warawara comes in difference sizes, so don't worry if they aren't all identical. The cookies puff up slightly when baking so make the indents deep.
7. Chill the cookies for 30 minutes
8. Bake the cookies at 350F for 10-12 minutes.
9. Transfer the cookies to cool on a wire rack then start working on the white chocolate ganache
10. Set up a double broiler: Grab a pot and fill it with some water. Place a bowl over top. Make sure the base of the bowl doesn't touch the water. Place the cream and white chocolate in the bowl. Bring the water to a simmer and heat the white chocolate until it melts, stirring occasionally.
11. optional: add white food colouring to the ganache
12. Transfer the ganache to a piping bag then fill in each cookie
13. Let the ganache set for 5-10 mins then draw on a face using royal icing.
