I tried the matoke recipe of African Tigress when she visited Jamaica. I think a squeeze of lemon juice also gets rid of the ‘stain’ brown bits, then wash it off a few times. I added a few extra bits of ingredients to put my own twist to it and it turned out really delicious. In Jamaica they generally simply boil the banana whole and then eat it with either a fish or meat dish, such as local Ackee and saltfish, or mackerel cooked down in coconut milk, or any of our many other meat dishes, but this way it can be eaten by itself. Also if you are a vegetarian or vegan, this matoke recipe is ideal by itself. Thank you for sharing this recipe.
