_Matsutake mushrooms are very rare- they grow in the roots of red pine forests. matsutake are harvested just once a year, and are very sensitive to changes in weather: if a season is too hot or dry, their numbers will wane and that pushes up the prices_

You can totally clean them under running water. That's just some urban legend/ old wives tale saying you can't. Run them under the tap and use a soft tooth brush. They come out perfect. AND.... you can freeze them, raw. Japanese method is wrap them really tight in tinfoil and keep them in a zip bag in the freezer. They are one of the few that can be frozen uncooked.

Looks super delicious! I live in the Midwest and I’m obsessed with foraging for mushrooms. This spring I was able to find some young Chicken of The Woods mushrooms and made a Hot Chicken of The Woods sandwich, similar to the one in the video. It was crazy good. You should add Chicken of The Woods to your foraging list!

The title threw me off... especially when i go to oregon every year for harvesting matsutakes. Wouldnt pay no 1000 for em tho cus this year the prices on em are around $15-$16 a pound.

Back in the early 90's when I first started harvesting Matsutake the price would go up to $600/lb. Prices started dropping cause there are more and more vendors nowadays,plus Vancouver B.C,Alaska, Montana, Oregon, Washington, and even China also harvest Matsutake's

Don't collect them in plastic bags. Use bags with holes in them so you spread the spores when you pick them so there are more next time.

Off of a quick search you can get (grade 1) fresh for 50 a pound so there is something that drives the price up somewhere, maybe the time of the year or region its grown.

I can almost imagine what those mushrooms smell like right out of the ground. Respect for the brown sugar, and you blew my mind when you mixed some of that oil into the bowl! Keep up the great work. I also wanted to share a story about when my dad would take me to the fields in the fall after the harvest, and we would pick white button mushrooms and look for puff balls. To this day there are times when I drive by a field and I can smell that extra earthy aroma of mushrooms in the soil drifting over the road.

Don't worry the mushroom its self is just temporary, they have a large underground structure/mycelium which keeps them growing back.
