My dear Matteo! I've already started to make my espresso from my new Moka pot. It's gorgeous! Going to make latte and Cappucinos shortly in the next few days. Now, where is Casey? I ask because I used to have cats before, including a pure white kitty named Pearl. Our community cat downstairs of my block of flats is a pure black too! Lovely to play with them! Cheers!

Italian standards are: low quality coffee beans, very dark roaster to hide the quality defects, not knowing anything about coffee extraction, random grams, random time and random volume, no cleaning the machine, re-steaming the milk several times and never cleaning the steam wand. Are you sure you want me to show you the Italian standards? 😂 Joke aside, that is actually the situation here in Italy. I will slowly slowly go thought many ways to make espresso. Definitely better than Italian standards

@ Let us say 95% does not follow the standards. It is still there. For example, one Italian school says 7.5g of coffee and volume is 30ml. Other school says 7g of coffee and the volume is 25ml. If people do not follow the standards, it does not mean it is not available. Please do not put like Americans: one shot is 50ml using 12g of coffee. If you do so, I have to unsubscribe.

@@bashiral-abduljabbar8649 7.5g for 30ml? not true. Maximum you can see is 20ml and lots of crema. In Italy 95% of the staff doesn't even know how to adjust the grinder, also they are even allowed. It's the sales person from the roastery that provide the coffee going there and adjust it. probably once a month. Because coffee machine, grinder, also other equipment, belong to the roastery and not the cafe. Baristas luck of knowledge. I'm telling you because in the past I was one of them. Also 7.5g in with 30ml out is the same ratio of 12g in and 50ml out. Basically these Italian schools are Americans XD. I even say in the video the standard ratio is 1:2, for every g of coffee in, 2g of coffee out. 7.5g dose in, 15g dose out. ;)

@ I got trained by one Italian Roastery. I tried both (7g to 25ml and 7.5g to 30ml). They both worked very well. I used 7.5g to 30ml for 9 years in local cafe using Italian professional espresso machine.

Never been to italy, but from watching a handful of clips about busy (and apparently traditional) coffee shops in Italy I saw nothing to learn from them, exactly because of the points you mentioned. And they keep boasting about Italian coffee standards. LMAO😂

AGAIN amazing video! Matteo, I have a question: Is tamping not necessary when brewing coffee in the moka pot and YES when using an espresso machine? Is there a difference between whether the water pressure is from above or below? Thank you in advance for your response

Thanks! So the difference here is the pressure. Not about the water going up or down. Moka produce 1.5/2 bars of pressure, espresso machine around 9 bars. If you do not tamp the coffee, water will flow very fast through the coffee pack
