My Godsister and I watch your shows, enjoy all of them. Made a few things. Next up is Chiney Cake, one of my faves, Your method is the simplest. Pera is like fudge. Are you familiar with penuce, my grand father lived on Fort Island and had cows. He would make this at a special time right after milking the cows. After scalding the milk, it would curdle and he added brown sugar, cinnamon, clove, orange peel and boil until most of the whey had evaporated, leaving a brown, thick ' curdley' mixture. Of course all these sugary items could make your teeth fall out but who cares, we were kids, now I have great memories to cheer me up. Keep up the good work. God Bless

Yum paynoose is so delicious! I will do that video with my grandmother soon! They lived in Berbice Guyana and her father owned cows so when the cows were milked they used to make pera or paynoose. I havent had it in a long time though. Thank you for watching!

Very nice Matthew ..... I always make it with white sugar and that is super easy however I once made it with brown sugar and it turned out sticky! Now I know from your steps with brown sugar and the exact times and temperature... I will try in 10 mins ... let's hope mine turns out like yours. Matt can you please make Guyanese ice cream? My extended family usually makebice cream for New Years family get together and I never asked them for the recepie as I feel I can't do it but somehow your recepies all seem so easy because of your precise information! I will try that for you! You have to use demerara or white sugar. The american brown sugar makes it sticky.

Yes regular American brown sugar doesn't work well. Use white sugar or the Demarara cane sugar.

I know that for this recipe you used 'sugar' and a 'can of evaporated milk' but instead using evaporated milk can you use condensed milk instead or no?

Yep! Traditionally fresh cows milk used to be used. Just make sure you only use whole milk.

Just a note for individuals using this to make parsad/persaud... Domino Sugar and many sugar brands use Beef Bone char to process their white sugar.. always opt for demerara sugar/raw sugar (any brand and NOT BROWN SUGAR) its a better pure alternative and there is now animals processed in the making. If you wish to use white sugar.. please buy Florida Crystals or an Organic white sugar, because more than likely it will be labeled vegan, and also not be 100% white. you can also use Jaggery if thats available.. but please do not use conventional white sugar/ Domino Brand sugar for making prasadam. It is processed with COW BONE CHAR.. I REPEAT COW BONE CHAR.

You have to boil it down for much longer than the time he estimated. Otherwise it will come out too soft like a caramel
