As someone who started their career in kitchens as a dishwasher French onion soup was the bane of my existence. Cleaning the cheese off those bowls was a never ending nightmare. But now as a cook, I love the dang stuff. Sayonara cheese bowls! Sorry dishwashers. Love ya.

as a french i can say you trully respected the essence of french cuisine You made this soup with love, quality ingredients, generous with the ingredients, and didn't try to short cut any step. This last part is important because what really makes it authentic traditional french cuisine is the time factor. All traditional recipes included slow cooking and where very time consuming. Obviously to kill bacteries but also often because some dish would be made in huge pot to be served at the market all day so they would continuously cook Oignon soup was a traditional dish kinda like street food. It was served in the morning to working class people and gradually became a classic late night after party meal. It is less common today but you can still find it if you really want to try it

As a fellow cook i love matty, I saw this recipe today while trying to find a dinner idea and had to make it. I'm currently half way through the process and I can't wait, looks and smells so good. Its totally simple to, I would recommend being fast and skilled with your knives though because it is a lot of onions to cut lol be prepared to cry.

So good. I use six different onions but it doesntv really matter which, as long as you have plenty of white/yellow/spanish onions.. the key is knowing what order to put them into the pan. Leaks are also really good in there too.

Oisín O'Sullivan matty’s not the best at being factual when he’s talking. He didn’t mean truly raw onion because those onions added after the liquids were added were probably cooked significantly, they just didn’t have a deep caramelization like the initial onions.

@Oisín O'Sullivan There is no raw onion in this soup, at least not in the final result. That aside, I'd think that Gordon would approve most, if not all, of Matty's dishes.

Literally was skiing on Mont Tremblant and broke my leg then had to lay there for hours then pack snow into my pants and finish the leg on the leg and dragged myself into the chalet and had the best french onion soup I've ever had.

@Nickhead87 To the uninitiated (you) Cheese wheels start by the process of caramel extract. The cheese is then reduced to give you what we now have is cheese which is mostly caramel. Thusly you have cheese. Yes it is caramel.
