FOR THE DONAIR MEAT
1 lb. ground beef
1/2 lb. ground lamb
1/2 lb. ground pork
1 tbsp ground coriander
2 tbsp garlic powder
2 tsp ground oregano
2 tsp ground thyme
1 tsp cayenne pepper
1 tbsp ground black pepper
1 tbsp salt
FOR THE DONAIR SAUCE
3/4 cup evaporated milk
2/3 cup granulated sugar
1/4 cup white vinegar
1/4 tsp garlic powder
TO ASSEMBLE
1 white onion, diced
2 tomatoes, diced
8 Pita bread
DIRECTIONS
Preheat oven to 375F. Line a 9” X 5” X 2 1/2” loaf pan with parchment paper.
Place meat and spices in a mixer fit with the paddle attachment. Mix on low for 30 seconds. Increase speed gradually. Mix on medium-high until meat is even and smooth, about 1 minute.
Pack meat into loaf pan. Gently bang the pan against the counter to get rid of any air pockets. Place the loaf pan in a casserole dish halfway filled with water to create a bain-marie. Bake on the middle rack of oven until internal temperature reaches 150F, about 1 hour 20 minutes.
While meat is baking, prepare donair sauce by mixing together evaporated milk with sugar in a bowl. Slowly pour in vinegar while mixing. Stir in garlic powder. Refrigerate for a minimum of 15 minutes.
Remove meatloaf from the oven. Carefully remove meat from loaf pan and let rest for a minimum of 10 minutes.
Thinly slice donair meat and place on a pita. Sprinkle on onion and tomato then drizzle with donair sauce. Roll up and enjoy. Repeat with the remaining ingredients.

I'm from Prince Edward Island and we have wicked donairs, we also use condensed milk instead of evaporated, then there's no need to add sugar, just garlic powder and vinegar. But by far the best donairs you'll ever find is at Tony's in Halifax

heavily working meat until it is 'emulsified' is done in many other dishes, commonly in sausages, especially hot dogs and bologna, but also in things like fillings for Asian dumplings, meat/fish balls etc. Note also there is no bread or eggs in it like would be in Italian style meatballs or meatloaf, which makes them more loose.

It’s even better if you pan fry the meat and with the grease add a splash of water while still cooking the meat and cover with the pita. Allow the pita to steam with your meat. Adds an extra level to the donair.

You will find them anywhere Maritimers migrate to in numbers. I’ve had a decent Donair in Alberta and you can find them in the GTA but they’re rare compared to Shawarma/gyros and stuff like that.

So it's an odd Canadian gyro with vinegar evaporated milk instead of tsatziki. Which itself is a sour yogurt sauce with dill garlic an cucumber.....I get it! Never had a donair...BUT, when I was drunk in Vancouver I ate plenty of pizza with an odd white sauce. It was this!!!! This american became a man in Canada. Love the usa, but I would immigrate to Canada if I could. The kootinays are Soo beautiful.

You'll have to visit try the Real thing. Each store / Pizza shop uses a different meat & Spice recipe . Oh and ask to see a sample of Sauce first. Or ask if they use the Carnation milk . Very key .

I made this tonight, and let me tell you, I shouted YEAAAHHHHHHHH Matty style. My wife said it tasted like street food (in a good way). Steaming the pita on a grate over a boiling pot is a great tip!

@@gibbyg2001 PRO TIP: the other thing that makes this even MORE FIRE is if you just LIGHTLY grill/heat up the sliced Donair meat in a skillet or on a flat top grill before ya add it to your steamed pita with the sauce, tomatoes and diced red onions just helps crisp up the meat and OH BABY!
