@@kusinako8340 For the simple reason that bagoong is considered a "sawsawan" (always on the side) that is paired with Kare-kare and you don't normally dump sawsawan in your pot of ulam. Traditionally and judging by how many people reacted that way, that's how it's *normally* done. Fairly easy to understand.

R. I. P. Kare-kare... The bagoong was a side dip (you put a little dab on your rice doused with the peanut sauce)... 😁... But anyhu, you guys just made me want to eat at Max's... A little trivia though... The recipe for Max's fried chicken was actually taught by an American G. I. and apparently it was an old style southern fried chicken. The story goes that this G.I. was stationed in the Philippines just as WWII ended, and Max's was the only place in Manila that time that had fried chicken (to cater to the Americans who were on shore leave in the country). But back then the "Pilipino" way was to season salt and pepper to the chicken and fry it in a shallow pan. And this American G.I. taught the owner of Max's (who became his drinking buddy) to brine the chicken and deep fry it. And that tip made Max's fried chicken way better than before, And that is how it has been since 1945... And by the way, the Pilipino dipping sauce for the Max's chicken in a mixture of ketchup, hot sauce, and worcestershire placed in a little saucer at the side... That's the OG Pinoy way... Sketti! 😁😉

PLEASE, don't dragged him too well because some people in the comments are like "he did it COMPLETELY WRONG" or "bruh, who puts shrimp paste into the whole meal?" I'll just say it politely. Also, to all people who also criticized Ryan for pronouncing the names of the food in Tagalog/Filipino, please be considerate and appreciate the fact that he tried his best to say it correctly as possible. And before criticized others, make sure you can speak and pronounce words without a hitch. Baka nga Illinois or Chicago hindi niyo ma-pronounce ng maayos. Also, I have some suggestions for Filipino Restos franchises that have made it stateside. I hope they’re are still open there. Try going to Gerry’s Grill in the Bay Area. They are known for their grilled marlin, tuna but they have a whole lot more. Goodah’s tapsilog in LA is another. Then you have Red Ribbon & Goldilocks for cakes and pastries & some pinoy dishes. Just when you guys go on a pinoy food eating spree again. 👍🏼

I feel like I’m the only one that thinks Jollibee is all hype. I mean it’s good, but definitely overrated imo

Point or order: Pronounce "bok" in palabok like "walk" or "stalk" and you won't go wrong. Max's is the weekend place for Manila-based Pinoys, traditionally, before fast food joints sprouted in the Philippines in the early '80s. The main rival of Max's is Aristocrat, which is famous for its barbecue chicken and Java rice, as well as the staples of Filipino cuisine. The people who said don't mix bagoong may be right - I'm one of those Filipinos who don't like the bagoong as much as others do, so I season my kare-kare differently. There are some regional restaurants which also serve excellent fried chicken. I haven't been to Angeles (Pampanga) since the turn of the millennium, but my favorite place is Angeles Fried Chicken, which was also popular with American GIs when the US still operated bases in Central Luzon. And we're not even talking about the Inasal of Bacolod yet. Lots of good chicken cooking in the Philippines.

Jollibee has a more fun and casual ambiance. Food is a bit modern or fusion but still with a Filipino taste profile. They cater to Filipino families with young kids and people on the go. I I think Filipinos would remember their childhood eating Jollibee on weekends or having a Jollibee kiddie party. Max's on the other hand is a classic Filipino restaurant which started in 1945. It is enjoyed mostly by adults because of their home cooked style Filipino dishes. Compared to Jollibee, Max's is a place where you have a sit down lunch or dinner with the family. This restaurant is also famous for celebrating family occasions such as birthdays or weddings.
