The fries in other countries are all fried in different types of oils. Example: UK: McDonald's UK fries are cooked in a non-hydrogenated blend of rapeseed and sunflower oil in dedicated frying vats. India: McDonald's India fries are made with plant-based ingredients and fried in 100% vegetable oil. There are separate frying stations for vegetarian and non-vegetarian menu items. Australia: McDonald's Australia fries are made with canola oil. Japan: still uses beef oil as the US once did. So Japan has kept the original formula to fry McDonald's Fries.
