I feel like you shouldn't really say Taiwanese dumplings, because there's actually no dumplings in traditional Taiwanese food. Dumplings don't represent Taiwan very well, and i would say that it represents China more. It was during the Kuomintang's retreat to Taiwan after the Chinese Civil War in 1949, and the arrival of waishengren from China when dumplings were mainstream in Taiwan. More traditional Taiwanese food would be braised pork over rice, oyster pancake, congee, etc.
