I think it's also the lower percent of puffy, bread and animal fat for frying. The noodles and dumpling dough are dense and therefore less filling even if there's probably the same amount of carbs. Some of the noodles and dumplings are boiled and not fried, taking down the potential fat.

fun fact - the reason traditional jiaozi (饺子)dumplings are shaped like and ear is because a legend states a doctor in China cooked dumplings to help promote blood flow and thaw cold ears, and shaped them to look like little ears. Didn't know this, but it's cool, and even without knowing this, I love trying to maintain a long noodle. One of my old favorite pho places had only one dish I liked with everything in it, crab, fish, shrimp, bbq pork, chicken and all the scallops and cilantro and I'd order it every time, but I almost choked on the noodles trying to reach the ends in one go they were so long.

We literally biologically formed eating meat for thousands and thousands of years... now you just want to disrupt the natural order for what? You should educate yourself... Not with a google search. But listen to podcasts with harvard and yale professors that have been studying this for 30 years.. Reminds me of camp, we had a regional camp (scouts) which was a competition between about 50 4-8 person teams (kids between 10 and 15). Everybody wanted to be last. Being last was more of an accomplishment than being first. Our camp leaders always told us to either do our best to be in the top 10 or be last. Fun times (this is about 8 years ago now). The top 4 could go to the national camp, which was way less fun (been 3 times, because we were try hards). Sorry for reminiscing under your comment. Not a native English speaker so idk if my scouts experience translates well to English audiences

In my country (Czech Republic) we have wide variety of sweet stuffed dumplings, they are served as a main course not as a dessert. Some of the most common are: strawberry dumplings covered in sweet cheese, sugar and melted butter, dumplings stuffed with plum jam, covered in sugar and melted butter, potato dumplings stuffed with a plum, covered in grated gingerbread, sugar and melted butter... there are also other types like potato dumplings stuffed with smoked meat and fried onion with side of cabbage etc. etc. l love all kinds of dumplings sweet or the other ones :)
