This really is the typical mother's cooking dish most remember from their childhood. I like it that every household has a different recipe even though the main ingredients remain the same. Here we love niku jaga as well. I have to confess I usually am a bit short in time so after I brown the meat I add the rest including all the seasonings and let it simmer together. I usually add some beans or edamame towards the end of the cooking time as well for some colour and extra veggs. For a spicy version you can add some doubanjian. I learned that from a friend.

What a nice video! In the Netherlands, we eat a lot of potatoes. We peel the potatoes with a small paring knife or a peeler. They work also very well peeling carrots.

Satoshi is so cute! I hope you're feeling better, Shinichi San! It's almost 4 am and now I want nikujaga so bad. I'm sorry I lost touch in the last year, guys. Everything had changed and I ended up missing track of what's new. Now I'm going through a huge change again but I hope to keep up. I love you and miss you both very much! Big hug from Brazil

I think it should be easy to find drop-lids in Japan! I have a bunch of them (here in FLorida) and they are all FROM Japan!!! Some are wood, some are stainless steel, and some are stainless and ADJUSTABLE like a kind of flower. I got them just for this kind of thing, because Japanese cookbooks made it seem important!!! How I DREAM of going to a kitchen-supply store in Japan, I have read about such things.
