Scalloped potatoes are my favorite. Especially, with ham. I Recall; My mom making this, when I was sick and the Pyrex casserole pan exploded; and we both stood there looking at each other in disbelief and sadness. Glad to hear you both are on the mend. Take care of yourselves.

I enjoy using my kitchen aid to mix my meat loaf. It does a good job. I canned pre baked meatballs this year in beef broth. I can thicken the broth or add a can of cream of mushroom soup or drain and use tomato sauce or use for meatball subs. They have been a great addition to my canning pantry. I also mix 1 pound sausage to 2 pounds beef and make 12 mini meatloafs on the grill. Then I freeze them two at a time for our future dinners.

The only true way to mix meatballs or meatloaf is with your hands. You making the meatballs bite size balls make it seem like you get lots more bang for the buck. Howie doesn't mind what you call him as long as you call him for supper.
