Made this a couple weeks ago for some guests and they loved it! Swapped the Tequila for Sotol to add a bit more earthiness. Also created a Synergy Syrup with ginger syrup, agave, and honey in a 4:2:1 ratio. Add a dash or two of Scrappy’s Firewater to turn up the heat. Cheers!

I added something similar to my menu once, not knowing it was already a thing! But I used Reposado, agave syrup, homemade ginger-pimento liqueur and a lime twist additional to the mezcal float

Going to be my next mix for sure. I’ve been doing a little substitute…..I slice and muddle fresh ginger, and use the full volume of sweetness by doubling the honey syrup. I’ve found a lovely fullness from the honey and a little sharper “bite” from the fresh ginger muddle….its great. Also, for those ginger fans I use sushi style ginger slices as a garnish!!

Nice looking riff on the Penicillian. I love Scotch, and now have been trying some higher quality bottles of Tequila than I've had in the past so this is tomorrows cocktail. I have El Tesoro blanco and Ocho Plata to work with & a few different Del Magueys'. I like that there's still some of those older VIDA Classico labels out there with the green lettering, I'm still hangin on to one of those empty bottles for history's sake.

Hey great video. I was just thinking of a concept Id be intrested in seeing on youtube where you would ask people for cocktails they created and then elevate them or change them while explaining your thought proccess. I'm just throwing that idea out there I don't know how feasable it would be but I've seen loads of new interesting cocktails on your Frond and I think people would enjoy seeing how they could enhance their creation.

Hi Steve, this will get my Tequila Blanco used up. I will sub the Ginger syrup for Kings Ginger Liqueur and make the honey syrup in my jigger. I will make it tomorrow as I now have only 1 cocktail a day. Nick from York

Sounds wonderful! The male household member does enjoy your penicillan. Iʻve watched this 3X to try and figure out how it ends up looking so yellow/orange as if its orange juice cocktail? I use honey syrup too, but with tequila blanco, mezcal = blanco, it’s hard to imagine the ginger & honey syrups alone create such an orange cocktail? Hmm. Seems that they do. Thanks for another great recipe and video.

The Liber & Co ginger syrup seems to give it a bit of a mustard colour.

If your ginger syrup has a ginger juice base (vs just an infused syrup), it adds a good amount of colour.

@@StevetheBartender_ none of them look cloudy, I have substituted the Rye whiskey for Bourbon and, when I asked for "sweet vermouth" at my local liquor shop, the owner said he didn't have any but, gave me "Rosso vermouth" instead saying "it's similar and, will work just as well"?
