Hi Rainbow, unfortunately, corn starch cannot be substitute for wheat starch.

Why does the dumplings crack open when frying (it pops open or the outside has cracks)? And is the outside suppose to be really hard? Can I use oil instead of shortening and how much of the oil? Help! I like this recipe bc it keeps the dumpling crispy but can’t keep it from not cracking and popping open.

Hi Kit Kat, it is not suppose to crack open at all. Could it be that your oil is too hot? The outside is not suppose to be hard , it should be just like sesame balls. If you fry for it too long and with too many dumplings in the wok until it turns golden, then your outside texture will be hard. Only fried as many as I showed on the video so that it's cooked on time with crispy texture on the outside.

@@meeliving1345 No, the oil is on medium only and it’s not crowded at all. I even tried it with only 2 dumplings in the frying pan and it still pops. The dumplings didn’t even turn golden color yet and it cracks and pops open already, so i can’t figure out why it’s doing that. Could it be that I used oil instead of shortening? Because I use oil in sesame balls and it doesn’t crack open.

When you go shopping, they will write wheat starch on the bag. It can be any brand. I have not used any replacement for wheat starch and not sure about replacement?
