A recipe from my family that has been handed down for generations, stuffed aubergines! My Mom taught them to me but her have a particular, unbeatable flavor! It is a typical Calabrian recipe, here with us the aubergines are always present!
These are eggplant boats stuffed with a soft stringy meatball and cooked in tomato sauce! Very good!
Repeat them as a single dish on Sunday you will feel what goodness!
Ingrediants:
3 Eggplants
300 g Minced beef
400 g Breadcrumbs
1 egg
3 tablespoons grated Grana cheese (or pecorino)
Garlic, basil, parsley, salt and pepper
Caciocavallo (provola)
300 g Tomato sauce
