I'm glad you're home and not down here in this tropical storm mess. There's lots of ways to make this pie. I like using mozzarella and cheddar cheese, green onions, and crispy bacon. You're right about Duke's and fresh tomatoes. I don't use an egg or the cracker/butter crust, but a little fresh basil is nice.

Meme, I never heard of a tomato pie and you know what! it looks quite good. Those tomatoes look absolutely delicious. Summer is the best time for them. That’s for sure. I always toast a piece of bread put a slice of cheese on it and then some mayo , I use craft., I know you like Dukes, and then I put my sliced tomatoes on top of that with salt and pepper and eat an open open face sandwich with a cup of tea or coffee. Nothing says summer like that. Cheers and God Bless

I made this tonight. It's so good! I added some mixed herbs to the tomatoes to bring out their flavor, and I had some leftover chicken that needed to be used up, so I seasoned it with salt, pepper, and garlic powder, cut it into bite-size chunks, and sautéed it with the onion. Delicious!

Would love to try that without the cheese, and with a home made bechamel instead of jar mayo. Less dairy would help the tomatoes sing. I'd also try it with filo pastry, rather than short crust.
