I just saw it today! I highly recommend that you watch it, the movie is much much better than the trailer shows. I went into it completely blind and came away actually crying. I see a lot of movies too so that’s kinda hard. 8/10 for me

He clearly is aware he has gaps in his memory. He probably realises the waitress recognises him, probably thinks whatever "the usual" is can't be that bad otherwise it wouldn't have become "the usual" for him in the first place... And doesn't feel like going into a whole spiel to a stranger about his memory loss, putting them on the spot and making them feel uncomfortable or awkward. So yes, convenience is a good enough explanation.
