INGREDIENTS
5 lbs honey comb beef tripe cleaned and cut (2 1/3 kg)
9 to 10 quarts water (8 1/2 to 9 1/2 L)
1/2 medium onion
2 to 3 cloves garlic
2 dried bay leaves
1 Tbsp Mexican oregano (2 g)
3.1 oz (90 g) menudo spice mix seasoning
*Note I used Bolner's Fiesta brand menudo mix

2 Tbsp sea salt (season and salt to your preference and taste)
30 oz (850 g) can of hominy (drained and rinsed)
INSTRUCTIONS
Clean and cut tripe well (I used the juice of 2 large limes and water to clean tripe)
Add tripe to a 12 quart pot and fill with 9 to 10 quarts of water
To the pot add onion, garlic, bay leaves, Mexican oregano and bring to a boil
Once tripe is at a rolling boil, cook for 1 hour
Clean and skim out any foam, scum or fat that floats to the surface to ensure a clean broth
After the first hour of boiling, now add dry menudo spice seasoning mix, salt, stir and continue to cook for an additional hour
After the 2nd hour of cook time, add drained and rinsed hominy
Continue to cook for another 45 minutes to an hour or until tripe is tender and hominy cooked through
This recipe should yield 6 1/2 to 7 quarts of menudo
Top with fresh diced onion, jalapeno, cilantro and a squeeze of lime

Oh my... yummmmmm!!! My grandmother taught me to pretreat the tripe with vinegar. It’s ALL good 😊

I clean my tripe with water, white vinegar and a cup of salt. I soak it for about 30 minutes and then rinse really well. I find it comes the cleanest that way. This recipe came out great!

Every estate in Mexico the cooking is different I was born in michoacan mexico and I just want add that I like my menudo with pata and nervio cows feet and also pigs feet aka patas de puerco . I been watching videos from KZbin and in other countries they call the menudo caldo de hueso . More flavor with the hueso thank you for sharing ur recipe I love menudo

We love it eating it for years in Texas. Going back years ago there was a place that every Sunday we could bring our own pot. They would fill to the desired amount and then charge. Good old days in Dallas Tx. Think it was earlier Dallas Tortilla Factory.

I have been craving menudo. I never ate menudo until I was in my 50’s (67 now). First ate it at the Kickapoo Casino in Eagle Pass. I have made it 4-5 times, but going to fix it next week. I love it with Serrano peppers.

Im not sure how its cooked at a casino, texas is a big state, so different areas have different variants, however, here in rgv tx, menudo is sold during the weekends in tortillerias, as close to homemade as you can get, the lines are long and its not guarantee youll be able to purchase some ones its your turn. Same qith barbacoa and carnitas.

Thumbs up for another good video. The menudo, though... I'm an adventurous eater and have tried menudo exactly twice. Both times at different places and both places recommended by different Mexican friends. I have to say that the menudo tasted pretty much the same both times. But lawdy!!! I just cannot do tripas or hominy!

The collagen from the pig or cow foot makes a rich full bodied broth. Sooooo good tasting and good for the body! My local taqueria has a mother broth. They add water and meats to replenish what they’ve sold keeping the pot full day after day. Nice thick broth does a body good. With tortillas of course.

I have never tried menudo before, It looks tasty. I don't mind tripe actually, I'm of iialian background and my mother used to make tripe in broth and casseroles for us. My siblings hated it but I liked it.
