HOW TO MAKE THE BEST AUTHENTIC MENUDO

Hello my beautiful fam welcome back to my kitchen, today I’m going to share with you the most delicious and authentic Mexican menudo!!!! This soup is perfect for the cold weather, rainy day, hangover or simply to enjoy on any day!!!! Ingredients:
Large Can of hominy
5 lbs honeycomb tripe or beef tripe
1 lime
1 onion
5 garlic cloves
2 tbsp oregano
2 bay leaves
1/2 c apple cider vinegar
Salt
Chile:
20 chile guajillo
4 chile Pasilla
2 garlic cloves
1 cup hominy
2 1/2 water
Salt
Toppings:
Bolillo bread or tortillas
Limes
Cilantro/onion
Chile árbol
1 serving of love 💕

Dear Claudia, I love to see that you're so young and have taken to traditional Mexican foods. when I was your age I could barely boil water! let alone make Menudo! goodness girl, you got it going. I'm now in my 50's and do cook, but I was always very nervous making Menudo, but for the first time last year, I made Menudo! Go figure! was still nervous but under the watchful eye of my mother. I caught you on KZbin by accident surfing the site of food, and there you were, I've taken some of your tips for Menudo, that I will implement this year. 9-19-20 Hi from Grantsboro, North Carolina. I'm a transplanted Tex-Mex (35 years here). I've been cooking menudo for years, but never made it like mom in San Antonio. The ingredients were interesting, I've never considered apple cider vinegar or using the dried chili's. I only use the dried chili's in my tamales. Yes, I cook everyday for me and my girlfriend. Excellent video production. I've made a couple of cooking video's for KZbin, but only used my phone. I'm subscribed... oh! and your recipe is now in my recipe box! They have never had menudo. I’m going to use your exact recipe and technique. I’m a pretty good Italian cook. My husband is Mexican but I’m Italian. Menudo is Medicine. I Was raised on homemade menudo growing up in the late 80s and 90s my Grandma would make a gigantic pot for the whole family. This recipe looks perfect. I’m making menudo right now, with Navajo fry bread. I need to try it out using chili’s and blending it. Not Hispanic, but my paternal grandma and mom used to make tripe with hominy all the time when I was a little kid. My husbands buddy/coworker who is Mexican, he is staying with us because him and my husband do a lot of traveling for work at refineries. They’re doing a job here in Utah. A couple weeks ago I made menudo and he said it was really good. So today he asked my husband if I could make menudo again. He said they have bread similar to fry bread somewhere in Mexico. Next time I make menudo I need to try it with the chili blending. 😁

None of the restaurants where I live use hominy in their menudo. It’s disappointing because that’s how I love it. Thanks for the vid, I’ll definitely try and make my own!

Yes, so true. I'm picky about my menudo, i find that some restaurants like to use the gross part and not the beautiful honeycomb pieces. Claudia, the honeycomb looks very fresh and clean!

I think its better if you make your own menudo ,i put pigs feet in my menudo but i cook them separately cause they are greasy and i add YELLOW tensdale hominy, and i use new mexico chili ,its easy to make and it comes out so delicious ,yours looks really good too,👍

My mom made the best menudo and pozole. Once her menudo or pozole was done she would add into the bowl fresh chopped tomatoes and chopped avocado. It taste so good. My mother past away and I never asked her to show me how to make menudo. I’m definitely going to try this recipe which is most likely the way my mother made it.

I love menudo. Never made it before. My Mexican Mom would not allow my Italian Pop to make it at home. The smell. I’m in central Texas and the Tex Mex menudo here doesn’t cut it for me.
