It's funny how the fist fight seems pretty underwhelming after hearing about Snake and Gray Fox having a battle to the death in a mine field when Snake talks about it in MGS1, but since Metal Gear 2 actually came first there's no reason it should have to be held up to the hype that MGS1 retroactively built around it. No, it's possible: sneak up on a tank and drop a few incendiary or HE grenades down the hatch. For a fighter jet: guestimate the jet's speed, set you or your squad's sights on a point in the sky, and then fire your weapons. The jet will fly right into the bullets. For all intents and purposes, a walking vehicle would be much easier to subdue than a rolling one, you would just need to disable one of the legs. Also, the armor on that mech is flimsy, and he throws more than one grenade.

@filipeflower If there where landmines in that room, then wouldn't he have stepped on it earlier? Mostly because he died in a place that he stepped on multiple times (And yes, he lies down before death) and yes, every boss explodes (for some strange reason) after death. (The only boss that would make sense to explode is Metal Gear, and its explosion is melodramatic). Nothing in the series ever states that he blew up from a mine, all they say is that Fox "Blew up" in Zanzibar Land
