that is actually not the origin of the red. it originated from the dutch chocolate that was used. the process used to make the chocolate prevented the chemical anthocyanins from changing colors.

Could you have painted the embellishments before you put them on the cake? or would the metallic paint be too messy? It seemed awful time consuming and quite scary that the metallic paint would actually get on that beautiful white cake when you were painting it.

I just found your videos (both here and on your own channel) because I LOVE watching cake decorating but had a hard time waiting for new videos over on Yolanda's channel How To Cake It. Your personality is so warm and fun and adorable! You have so much skill and approach designing and decorating cakes in such unique ways. and the sound effects and interactions with the crew makes watching you bring these cakes to life even more funny and entertaining. also it really struck me how thoughtful you are when you were painting the details metallic and said "if you can't consume alcohol at all you can use lemon juice" i have several muslim friends who cant consume alcohol for religious reasons and just that little aside can make all the difference in having something be a little more inclusive and made me so happy. thanks for sharing your talent and your treats!

The history about red velvet cake is incorrect, or at least not old enough. The original red velvet cake used an acid reaction to leaven a chocolate cake, usually buttermilk or vinegar. The acid also reacted with the cocoa powder, turning the cake red. It was renamed red velvet cake. Modern cocoa powder does not produce this reaction, so now cakes must be turned red using food coloring. But, yes, it was a brownish red, not technicolor.

Why wouldn't you paint the decorative pieces before attaching them to the cake? I'd be worried about getting the metallics onto the actual cake when doing the edges.

I heard that red velvet cake developed during WW2 when chocolate and sugar were rationed. So it started out as Devil's Food cake, but there wasn't enough sugar and cocoa to do it like usual, so people used shredded red beets to sweeten the cake (so it could use less sugar) and that also made the red color (and disguised there not being enough chocolate).

I thought red velvet got it's colour because the buttermilk reacted with the cocoa powder and that turned it red. But we just process things differently so that we have to add the food dye.
