They looked good Andy but the filling is more along the lines of burrito and even then burritos are normally baked or the tortilla is on a griddle pan. Enchiladas are covered in a spicy sauce with added cheese ontop then baked in the oven. Excellent forst try though 👍👍👍

Apparently yes, the recipe I got never said anything about putting it in the oven, it just said serve them how I did, but yes I think that they should of done, it’s the first time I have ever done them, but looking at other recipes yeah you are right 👍🏻 Don’t know who wrote the recipe but on the upside they were nice 😂👍🏻

Looks great but you need more sauce, more cheese, then put it in the oven or grill for 10/15 mins. Top work though

Andy ,this is a very tasty burrito,but an enchilada it is not,try taking a look at ‘ Rachel cooks with love’ or ‘ Rick Baylis’ channels,enchiladas are usually just meat inside,it’s all about the sauce it comes with,then they are baked in the sauce ,topped with cheese,and usually served with Spanish rice,and either refried beans,or my favorite black beans.Sauces can be either red,or green,I love the green sauce,made from tomatillos,jalapeños,onions, and garlic.Mexican food doesn’t usually have coriander powder in it,but does have oregano,they even sell Mexican oregano here,it’s a bit stronger tasting.However you made a lovely burrito,and I’m sure it was delicious.I don’t usually make my own enchiladas,as I have a really good Mexican owned takeout near my house,and they deliver,so every now,and then I treat myself to real Mexican home cooked food.Their carnitas, are the best,and the shrimp tacos are lovely.Love Mexican food,and as I worked in the restaurant business,I have worked with a lot of Mexicans,and they are the nicest,hard working people.

Sounds good, it’s the first time I have ever made it, so just following a recipe I found on the internet which was called Chicken enchiladas recipe, so I don’t know maybe there’s different recipes for it, I have no idea, I know it tasted nice 😂😂 Those Mexican restaurants where you are sounds absolutely amazing.
