As a Mexican I can say this is my very favorite breakfast. There needs to be the Perfect balance between crunchy sogee tortilla and spicy flavorful salsa the egg should be teneder enough so the yolk can mix with everything else.

I love the fact that we cook a lot of things with the same ingredients but everything is called differently and tastes diferent hahaha chilaquiles, migas, sopes, tostadas, flautas, tacos dorados, enchiladas, chalupas, etc.

As a foreigner living in Mexico this iss the bane of my life. One difference in ingredients there is a different name. The tortilla is prepared in a slightly different way, different name. Took me 5 years to try a gringa because I didn't know what it was, then found out it was essentially 2 tacos de pastor with cheese. Now it's my favourite haha

chilaquiles is like the easiest breakfast lol. well, in my house we have batches of pre-made green sauce just to pour on tortilla chips. also drink a hot cup of coffee. taste amazing with the sauce while you're eating your breakfast

I’m here because I made chilaquiles the way my mom made them and wanted to see if there were differences. My mom scrambled eggs into the chilaquiles but I’m wondering if that was because we didn’t like sunny-side eggs. Also, my mom’s was more soupy, and less emphasis on tomatillos-a lot more scrambled eggs and cheese. I’ll try this and see how I like it. Thanks!!!

After a life time of making chilaquiles, i learned something about the salsa. Ive not cooked mine down like Chef. I will now.... also i cheat and use the air fryer to make the chips then blend with the salsa after. Saves time and flavor/texture is atill there. Eso chef!

Watching a chef make it versus watching your parents make it is wild. It's usually a quick thing to make and it's nice and cheap. You can make it in bulk real easy and have a solid get together early. We once fed 18 people for the Mexico game early in the morning. Lotta chips.
