Chinese-American, but love Vietnamese food. Haven't had chè ba màu and bánh da lợn in a while, but they're some of my favorite desserts. The other dishes didn't look properly prepared though. Bánh xèo is delicious when it's fresh, especially wrapped in lettuce and dipped into fish sauce. Phở looked soggy. Also, where's the lime, Thai basil, hoisin sauce, and sriracha?

Banh xeo should be eaten fresh since it's pan fried. Eating it cold is like eating french fries after 15 minutes. Even if it's reheated it's not the same.
@MikeC555

I don't think most of these meals were prepared correctly. Soft Pho noodles usually means it's been sitting in hot broth too long. No crunch on that sandwich bite. Spring rolls had chewy wrap because it's dried up from sitting. It's also looks like they didn't touch the dipping fish sauce.
@thealmightyollar

@@MikeC555 Well actually, fresh Pho noodles in Vietnam are soft. Just don't confuse soft with swollen (as it's been sitting in broth too long) . I can't stand hard and chewy Pho noodles in Europe. Can't say for Pho in the US.

Bánh xèo must be eaten when it's still hot and crispy. Fish sauce has to be good. Banh xèo must be eaten with really good fish sauce, this would give an unami flavor. Without good fish sauce, I would not eat Bánh Xèo (even they're hot and crispy). Same thing with spring roll. Without good sauce with it, I'd not eat spring roll. The sauce gives unami flavor.

Glad you guys tried Vietnamese food, but for the foods like the spring/summer rolls and the banh xeo, those are so much better fresh. The rice paper on the rolls look wilted, and the mamahs said it was chewy, which is a big giveaway. The banh xeo, since it's pan fried, should be crispy, which is why they said it was rubbery.

I'm not even sure if the last noodle dish is actually Vietnamese, it looks more like a Chinese noodle dish. You can definitely add Sriracha to it for added hotness. And it's a shame they didn't try any fried imperial rolls (cha gio), that shit is to die for.

Martha is so cute and pronounces the item pretty well. Viet food is tricky sometimes. Everything is meant to be eaten together but is customizable. There’s always chili at the table to add spice but only if you want to. Banh xeo needs to be eaten fresh or it’ll get spongey vs crispy. Air fry helps. Spring rolls also should be steamed to bring moisture back to the rice paper and always eaten with sauce. You can also throw chili in the sauces. Pate is definitely an acquired taste. For a newbie, I feel like banh mi thit nuong would have been better. Glad y’all did this 🎉

I'm Vietnamese and there are different types of things you can put into Banh Mi, they're not all the same and you can literally customize your Banh Mi depending where you go and like put whatever you want on it or they'll give you a bag of it. I am also picky what type of meat I eat on it. For Banh Xeo, my mom cooks it GOOD ASF and we just add soy sauce on it and it's the BEST and it's not bitter or bland or chewy, I think it was definitely made wrong here. It should be eaten fresh as soon as it's cooked

I totally understand how Mexican don’t like beans as dessert as they are used to having it as food. Whereas me as a cambodian/Vietnamese, we are used to have bean as dessert and not dishes( maybe there a few dish that use beans) . So I also feel weird when I eat burrito or tortilla that have beans in it.

I'm super proud all these tias at least tried our food & it made me super happy that 1 of them was super all about every flavor. I don't expect everyone to like every flavor, but the attitude that they each came with was what I liked. They were open to it & not disrespectful at all.

psa you're supposed to have more sauce on the spring rolls and bánh xèo. the sauces bring out the flavor and are at the heart of the dish.
