Wow I'm from Mexican background and you basically nailed it. My grandmother traditionally doesn't add any butter, celantro, chipotle and lime. She just adds mayo after the roasting of the corn. Than adds cheese (Queso fresco) and chile powder. It's an authentic Mexican appetizer and it is absolutely killer! Good video man!

I mixed all the ingredients together in a bowl, added a pound of frozen corn, then cooked it in my air fryer for half an hour. Really came out well. I highly recommend it and it’s a lot easier and makes far less of a mess than when the corn is on the cob.

Hi, nice recipe, i´m mexican, i came across this and i would like to you give 3 suggestions, all we use for this recipe is: mayo, corn and chile piquin. 1.- don´t use butter, use more mayo instead, you want the cheese to stick to the corn. 2.- use panela shredded cheese, i´m not sure if that type of cheese is available there, just use any type of fresh cheese you can grate without loosing it´s tickness, you will want A LOT of cheese and 3.- use chile piquín instead of that mixture, chipotle is not for everyone and you won´t enjoy it as much as you would enjoy chile piquin, simplicity will give you the best results in most mexican recipes, also most of the flavor comes from the way you cook it, in most cases boiled corn will taste better than the grilled one. To boil corn you will want to use a little bit of YERBANIZ, about half a cup for every 8 portions (8 pieces of corn) and 1/4 tablespoon of aniseed or anise, you will taste the difference. Good luck.

+lefty7887 well variety is ok, recipe in this vid is actually pretty good, people are free to modify recipes, someone could come up with a version better than the original one, who knows!, in fact you will find different ways of doing it across mexico, i just find this a little messy, specially the chili mixture and butter, because who would like melted butter dripping off their food?, simplicity is always the way to go imo. If you would like to taste corn with butter you can always try to cook "esquites" they are grains of corn, you will need packs of corn grains or you could also take the grains off yourself (just make sure the corn is mature and not fresh), first you saute them with butter,then add water with epazote and boil for about 20 minutes or until it's ready. You take the grains out with a spoon and serve it in deep soup plates or cups (you decide how much water from the esquites you want or no water at all), you can top it with a lot of cheese, chili, lemon/lime juice or whatever you would like, most of the time mayo is added aswell but you decide if you want mayo or not. For accurate times you will need to find a recipe but with that you will be able to compare the taste between corn with butter and corn without it, it's not that different because mayo is already delicious.

We do these when corn is in sale lol, but we only use mayo, Mexican chili powder or tapatio which you have there on your table, and queso cotija instead of fresco it has a stronger flavor. Will try these receipe next time, great video.

Awesome, just like they sell them in Mexico. I recommend using Salsa La Tapatia or Salsa San Luis. That is what they use. I have never seen it with cilantro, but I guess it might give it an awesome flavor. I live in South Texas right across from the border and every time we crossed to visit family, had to get one of these Elotes Preparados. Great Video.

Cooking shows I've seen ( Ric Bayless ) showed something like this but they put all the mayo and cheese etc on the corn first and grilled or baked it until the corn starts to look a little burned on some of the kernels ( it isn't really ) I modified the recipe by wrapping them in foil before grilling to limit flare ups.

Corn is not very common on the grill here in Germany... but, it is very interesting... is it an appetizer for you or tends it more to be just like main course? Anyway, I will try this in the summer for sure. Thumbs up!

It is a very common side dish here served with BBQ or pretty much anything cooked outdoors. Most commonly served up with just a little butter and salt. You'll usually see white sweet corn (like I used) or common yellow corn. The white corn is very sweet and crisp!

I’m from Laredo Texas, mexico is besides me, I have family there my whole city has to do with Mexicans, the original recipe is ( A lot of mayonnaise with cotija cheese & some lemon! Also you can add tajin for spice or lemon pepper seasoning ! ) some add butter some don’t.

this looks awesome but....traditional corn is made by boiling corn not grilled. also mayo first then queso fresco then butter not melted though you can pick up a squeeze bottle from grocery store to make it easier then chili powder. that's the way you'll find them in streets of LA :)

It's all "factory farmed" out here. Herbicides, pesticides,GMOs, etc. Olathe sits in a valley, surrounded on 3 sides by buttes and mountain ranges. Minerals run down into the valley with snow melt & rain, and they raise the crops without spraying any of the industrial crap on it. GUUUUD stuff!
