Funny, I just made a batch of this two weeks ago. A couple of guys from my church helped me with my car, so, as a thank you, I made a meal for them and their families. Ribs, jalapeño poppers, potato salad, coleslaw, and street corn. That food was a lot of fun to make.

Yes one hour presoak works great but I found ice water is works better it hardens the corn and keeps a great juicy corn but don’t just take my word for it this guy is a great cook and I’ve leaned a lot from him thanks bro

It's called "elote" here in Texas, a lot of street vendors have it. If you have never had it you are missing out. It's really good. Also, a variation that I have seen most vendors do is cut the corn off the cob and put all the ingredients in a cup.

Malcolm you have taught me so much about smoking and grilling and I thank you. . Now I’d like to share with you how we northerners do corn 🌽. Before you put it on the grill soak it in a bucket of ice water for about an hour . Remove from the bucket and shake excess water off then place on grill. The moisture will steam the corn on the inside . Shuck it dunk it in butter and season to taste.

My family wiped these out. Wouldn't shut up about how awesome they were. The combo of cotija cheese with a little fresh lime juice is amazing. I was a little worried because cotija smells like feet. I forgot to ask my wife to get corn still in husk but the recipe worked just as well with shucked corn. Only addition was a light brush of olive oil on the corn before going to the grill.

We soak the freshly-picked ears in a bucket of water for a few hours, then grill them. They steam nicely, and the husks don’t burn nearly as quick.

I usually soak my full corn husks in a bath for atleast 30 minutes prior to adding to the grill and cook the same way. I feel it steams the corn in the husk better this way from not soaking them as I started out doing. NOT saying you are doing it wrong just adding to your awesomeness.

Coming from Los Angeles, I have to say that you did a great job on the street corn. Grew up eating those from the peeps that sell in my neighborhood. I do recommend getting some butter on it, but that also depends on the type of corn you are using.

Malcom, I tried this and it was great flavor. I have never tried the Tajin seasoning, Now I put that on everything. Also if you use the Mexican sour creama it goes great with the corn. Love watching your videos and have got alot of great ideas from you. Keep on rocking the BBQ

you want to get that corn browned here and there to make it authentic, I strip the husk down as it blackens until I get to the cob itself while grilling

I peel the husk like a banana,pull the silk, season it to your taste,rub with butter, parmesan cheese lime juice, green chili or WHATEVER. Push the husk back in place and tie it shut with a twisty tie from the grocery store (grab extra when you buy and bag your corn) then place on grill, you can cook and turn for 20-30 minutes depending on heat.

After you cut off the bottom of the grilled corn, hold it by the husk tip and the corn will slide out of the husk without the silks. You don't have to peel it. Just let the corn slide out. Saves time and mess.
