I've tried sisig with egg and mayonnaise, the worst one was the one with mayo. The best sisig is the original Angeles version, nothing beats the classic

It's actually chicken liver. Pig's brain and mayonnaise are more like Ilocano-style, the difference is that pig's brain is more authentic while mayonnaise is the cheap version.

original version does not have egg. if you put egg in it, it's already an omelet version. also it add more serving if you add egg in it.
