For everyone saying you're removing all the flavor when you wash away the tomalley this isn't a Maine lobster or any other lobster for that matter this is a Florida lobster or a rock lobster. The tomalley in a Florida lobster is incredibly bitter and will actually ruin dishes if left in or ruin stock if boiled whole, which is why it's removed. Maine lobster? no problem leave it in and it tastes great, don't do it for a rock lobster it'll ruin your day LOL

In my opinion.. this type of lobster looks better when cooked than the Maine lobster, but let's you down when it comes to flavor. To summarize... no claw meat to enjoy and almost flavorless.

It has a firmer texture as well. I would say it’s kind of gritty. Maine lobster kind of has a sweet flavor to it. Spiny lobster has a weird subtle flavor to that it that turns me off.
