Hello Michael chef, it has no doubt to say those were the perfect cake results after the baking. Those chiffon cakes apparently has a beautiful colors , smooth and fluffy. Hi Michael. Thanks for your amazing channel. Love it. Btw I’ve been trying to make your old recipe and today I tried this one. None of them works for me. I’ve tried with 70 min. at 120º and 10 min. at 50º w. Fan but it was still not done at all. I keep making it but it didn’t get up much. I’m using 9gr. Protein flour. Is that the point? Thanks so much.

For a pan size of 23 cm, the chiffon cake pan has a height of around 10 cm. It is made of aluminum.

This chiffon cake needs to turn upside to cool down to hold its' shape. It will be difficult with muffin tray. It will shrink and deflate using cupcakes liners. It won't work.

Hello Micheal. I hope you are feeling better. I will try this banana chiffon recipe but I will use pumpkin. but because the pumpkin is not sweet i will use the older recipe with higher sugar content. I also want to use full fat buttermilk instead of regular milk. what do you think? how do you think the buttermilk will work? It's higher in acid so I'm not sure.

Hello! Thank you for the well wishes. Substituting pumpkin sounds like a delicious twist on the recipe, and using the older recipe with more sugar is a smart choice for balancing the flavor. Full-fat buttermilk will add a lovely richness and slight tang to the cake, and its acidity can actually help tenderize the crumb, making it even softer. Just be mindful that it might make the batter a little thicker, so you could add a touch more liquid if needed. Excited to hear how it turns out!

Hi Michael, l remember when l was younger going to a bakery and my mum would always buy a green chiffon cake (it was the most moist, subtly flavoured cake, we loved it 💚) We've since moved countries and never again have l found such a delightful chiffon cake. I may have heard wrongly. If we use a normal baking pan, it’ll be a sponge cake with this recipe. Is it just the different name we use or even the texture will be different though we are using the same recipe?

This chiffon cake recipe won’t work with normal pan. Chiffon recipe is created for tube pan, not for regular pan. Unless you want a sunken flat cake. Whereas sponge recipe will work with both regular pan and tube pan. There is a big different between chiffon cake and sponge cake texture. If your chiffon recipe can be baked in a regular pan, then your chiffon recipe is more of a sponge recipe.

@@何晓平 Aldi only have All purpose flour (Albona Tarwebloem), and self rising flour (Alnona Zelfrijzende Bloem). Tarwebloem or patisserie bloem are all purpose flour, not cake flour. So at the end you are using all purpose flour not cake flour.

This banana chiffon cake is different from your banana chiffon cake from 2016. The one from 2016 had 200 grams of sugar into the flour mix for a total sugar of 300 grams. and banana essence. this new banana chiffon cake only has 100 grams sugar into the flour mix. for a total of only 200 grams of sugar. why the difference??

3 Common Mistakes When Making Chiffon Cake 1: The meringue consistency. Always use fresh room temperature eggs. When I say room temperature, it means around 21°C. If you leave in a warm countries, I believe you store your eggs in the fridge. In this case, leave your refrigerated eggs on the counter top for 10 to 15 minutes before use. 2: The folding techniques. Folding meringue can be difficult, if the meringue is lumpy (over whisked). Most people tend to over fold the cake batter because of this. It needs practice to fold a cake batter, so be patient. Later in this video, I will show you how to use a whisk to fold batter. It is more sufficient than a spatula. 3: Using the correct baking pan. Chiffon cake is known for their tall structure. It is soft, airy, light, and yet have a moist texture. This recipe is created for the use of tube pan. Using other regular pan, other than tube pan won't work. If your chiffon recipe works using regular pan, your recipe is a sponge recipe not chiffon recipe. No matter what fancy words you use to call it, or words other creators may or might use. 225g All purpose flour. 100g Sugar. 1/2 tsp. Salt. 1 tsp. Baking powder. 7 Eggs (weigh 60-62g each with shell) 100g Banana. 7 Egg yolks. 150g Milk. 100g Oil. Mix well. 7 Egg whites. 100g Sugar. 1 tsp. Vinegar. Always use fresh room temperature eggs. When I say room temperature, it means around 21°C. Do not over whisk the meringue. Reducing sugar in egg white will course the meringue lumpy once over whisked. It will make folding much difficult. This is the correct consistency. Here I am using a whisk to fold in the meringue. See how easy it is. It makes folding much faster. Remember, over fold will deflate the meringue. So take it easy and your time. Look how smooth and beautiful it is. Add in the rest of the meringue. This part of the video is unedited, so you can see the actual folding experience. Before the meringue is fully incorporated, change the whisk to rubber spatula. Just beautiful and perfect chiffon cake batter. Tube pan size 23cm. Preheated oven at 120°C. Baking mode: Top & bottom heating elements without fan. Baking time: 70 minutes After 70 minutes, increase the temperature to 150°C. Switch to top & bottom heating elements with fan, and keep baking for another 10 minutes. Baking time may vary depending on the accuracy and type of your oven. Turn the pan upside down immediately, once out from the oven. If you don't mind the cracks on the cake, bake it at 160°C for 65 minutes, convection mode.
